Delicious honey gingerbread for the New Year is a great opportunity to diversify the standard menu and add variety to the well-ordered range of appetizers and salads. It will turn out very tasty and impressive thanks to painting the finished aromatic confectionery products with sugar icing. This is not so difficult to do at home.

Ingredients

To bake this version of New Year's gingerbread, you need:

  • honey – 100 g;
  • egg – 4 pcs.;
  • peeled rye flour – 250 g;
  • cocoa – 3 tsp;
  • wheat flour – 400 g;
  • butter – 90 g;
  • egg white – 1 pc.;
  • soda – 1 tsp;
  • powdered sugar – 400 g;
  • spices – 2 tsp.

Pay attention! You can add spices to New Year's honey gingerbreads: cloves, cardamom, cinnamon, nutmeg, allspice, etc. But you shouldn't use everything at once. Take 2-4 spices for the dough.

Cooking method

The process of making New Year's gingerbread is not particularly difficult. If you use the proposed step-by-step recipe with photos, then all problems and difficulties can be avoided.

  1. First we need to prepare all the components for our gingerbread cookies and glaze.

  1. If all the ingredients are collected, you can begin the actual process of creating confectionery products for the holiday. To do this, combine butter and honey in a common bowl. The container with the components is placed on low-low heat. Everything needs to be melted down systematically. You can also use a water bath for this.

  1. In a separate bowl, mix powdered sugar and eggs.5

  1. When the melted butter-honey mixture has completely dispersed, add soda to it. There is no need to extinguish it with vinegar, honey will do that. As a result, foam forms on the surface of the mixture.

  1. Carefully pour the egg mixture into this mass, continuously breaking it with a mixer.

  1. Both types of flour should be sifted separately. Then this needs to be done again, but by mixing together spices, cocoa and both types of flour - rye and wheat. The dry mass should be poured in a thin stream into the mixture of honey and eggs. The mass is stirred. You need to make dough out of it. First you need to mix it with a mixer.

  1. Then you will have to knead the dough by hand. It is divided into 4 equal portions. The pieces are wrapped in cling film and placed in the refrigerator for an hour.

  1. The chilled honey gingerbread dough is rolled out into a layer no more than 5 mm thick. Try to achieve homogeneity of the dough, without bubbles. Gingerbread cookies are cut out from the resulting layer using stencils or molds.

Note! If you plan to decorate the New Year tree with ready-made confectionery products, then at this stage make holes for the fasteners. For this purpose, it is optimal to use cocktail straws.

  1. The baking sheet is covered with parchment. Our gingerbread cookies are laid out on it. They should be placed in the oven, which is heated to 150 degrees.

  1. It will take 10 minutes to bake the sweetness, maximum 12. The main thing is to wait for the formation of a golden crust.

  1. Now you need to make the icing to decorate the gingerbread cookies. To do this, powdered sugar (200 g in total) is whipped with raw chicken protein. The resulting viscous dense mass is sent to a pastry bag or syringe. You can take an ordinary file or a package. The tip of the bag is carefully cut off, just a little bit, so that the contours are created smooth and neat.

  1. All that remains is to paint the New Year's gingerbread cookies, guided by your imagination.

Gingerbread New Year's gingerbread

New Year's gingerbread with icing has become a real classic. Their rich taste is associated with cozy winter evenings spent in the kitchen with the whole family. Ingredients

To prepare this version of New Year's gingerbread, you need:

  • butter – 200 g;
  • ginger – 2 tsp;
  • granulated sugar – ½ kg;
  • cinnamon – 1 pinch;
  • water – 200 ml;
  • flour – 900 g;
  • nutmeg – 1 pinch;
  • salt – 1/3 tsp;
  • ground red pepper – 1 pinch;
  • soda – 1 tsp.

For the glaze, which we will use to decorate the finished gingerbread cookies, you need:

  • lime or lemon – ½ piece;
  • powdered sugar – 400 g;
  • protein – 2 pcs.;
  • gel type dyes – 4 drops.

Cooking method

So, if you decide to diversify your holiday table with New Year's gingerbread cookies, take note of the proposed recipe with step-by-step photos. This will make it easier for you to cope with baking, especially if you are making such a dessert for the first time.

  1. First, prepare all the necessary ingredients and don’t forget about the molds for cutting out figures from gingerbread dough. You can make not only funny little people. Stars, Christmas trees, mittens, and images of Santa Claus will fit perfectly into the holiday atmosphere. You can even just use a glass to cut out charming circles.

  1. Take a thick-bottomed pan or cauldron. All the sugar is poured into the container. The dishes are placed on the fire.

  1. During the first 5 minutes, the sugar should dissolve without your participation, on its own. It should not be disturbed, touched, tasted or removed from the stove.

  1. When the bottom layer of granulated sugar disperses and changes color slightly, you should start stirring the mass.

  1. There is no need to increase the fire. Don't make it overly strong. Let the sugar gradually and gradually dissolve. As a result, it should disperse entirely. The liquid mass will acquire a dark, rich color. When the syrup is ready, you will need to boil a kettle of water. You only need to take 200 ml of boiled water. They should be poured into the burnt sugar as carefully as possible.

Pay attention! When you pour water into the sugar syrup, the mass will begin to “shoot”. So be extremely careful not to get burned.

  1. The resulting composition must be mixed thoroughly so that its consistency becomes homogeneous. You will need to add butter, previously cut into small squares, into the mixture. The mass must be stirred and waited until it becomes completely homogeneous due to the dissolution of the oil.

  1. Add cinnamon and salt to the gingerbread preparation for the New Year. The composition must be diluted with nutmeg and soda. Ground red pepper also comes here.

  1. The preparation must be stirred thoroughly. It should double in size. The mass will turn into a fluffy and dense foam.

  1. The flour should be sifted twice so that the finished gingerbread cookies are tender and tasty. The mass is removed from the stove, and you will need to pour the prepared flour into it in several passes.

  1. After adding each part of flour to the dough, the composition must be thoroughly stirred. After adding the entire portion of flour, the dough should become manageable and elastic. Some stickiness will be present, but not excessively. The mass is wrapped in cling film and placed in the refrigerator for an hour. It is optimal to leave the dough in the cold overnight.

  1. In the meantime, you need to start preparing sugar glaze (icing) for painting future gingerbread cookies. To do this, it is worth preparing the necessary components.

  1. Raw egg whites should be poured into an empty bowl. Fine powdered sugar is poured onto them in a thin stream, which is sifted through the finest sieve before adding to the composition.

  1. The ingredients should be stirred with a fork or whisk. All the powder should be saturated with protein mass, as a result of which the composition will turn a little white. Then you should continue beating with a mixer or blender. The device should be set to high speed so that the mixture becomes thick and fluffy. The resulting shade should be crystal white. While whipping, squeeze the juice from half a lemon or lime into the mixture.

Note! The total duration of whipping the icing is about 5 minutes.

  1. Now our glaze is ready to decorate gingerbread New Year's cookies for serving on the holiday table. The icing will need to be divided into several portions and diluted with a specific dye. The glaze is covered with film and sent to the refrigerator.
    1. They must be placed in the oven, preheated to 180 degrees. The optimal mode for baking is 7 minutes.

    1. When the baked goods have cooled completely, they should be painted with the prepared icing.

To make gingerbread cookies for the Christmas tree you will need:

flour - 200 -250g
egg - 1 pc.
soda - 1.5 tsp. l.
butter ( room temperature) - 100 g
sugar ( brown is better) - 100 g
honey - 3 hours. l.
ground ginger - 2 tsp. l.
ground cinnamon - 1 tsp. l.
ground cardamom- 1 hour l.

ground cloves - 1 tsp.

How to make gingerbread cookies for a Christmas tree:

Step 1. Make the gingerbread dough.

Grind butter (beat) with sugar, whisking, add egg and honey.

Sift flour, spices and soda, mix and add to butter- egg mixture.

Knead the dough well and put it in the refrigerator for an hour. 1,5.

Step 2. Cut out the gingerbread cookiesand bake them

Roll out thinly, cut it out, use a cocktail straw to make holes for the ribbon and put it in the oven for 5-7 minutes at temperature 180 degrees.

Step 3. Decorate the gingerbread cookies.

After cooling, decorate the gingerbread cookies with sugar icing (beat 1 egg white with powdered sugar, you will need about 150-200 grams of powder). Send to dry away from children's fingers.

Step 4. Decorate the Christmas tree with gingerbread.

After a day, you can tie ribbons to the gingerbread cookies and decorate the Christmas tree with them.

Soft glazed gingerbread cookies with the aroma of honey and healthy spices, covered with a thin crust of citrus-sugar glaze, like the first ice on puddles... This is a wonderful winter treat for tea for children and adults! The aroma of ginger and cinnamon, oranges and fresh baked goods immediately fills the House and soul with a pre-holiday, New Year's mood!

This recipe for homemade gingerbread was invented on the basis of two - honey gingerbread, which we invented, in turn, on the basis of honey cake; and gingerbread cookies. After the children really liked the custard with honey, I thought: what if we add spices to the dough - ginger, cinnamon, nutmeg, cloves, turmeric?.. You should get fragrant New Year's gingerbread cookies!

And they turned out :) But, I want to warn you - the children liked just honey ones better, without spices :) So, as for the taste and color - if you like ginger and other seasonings, then bake! And if it’s not very good, then you can add vanilla or no spices at all. It will be delicious either way!

You get a lot of gingerbreads, they remain soft for a long time, they keep well (if you don’t gobble them up on the first day, of course:) So you can bake gingerbread cookies with your whole family on the weekend and then take them with you to school, college, work...

Ingredients:

For 25-30 pieces:

  • 2 eggs;
  • 2 tablespoons honey;
  • 1 glass of sugar;
  • 60-70 g butter;
  • 2 teaspoons of baking soda (level);
  • 450-500 g wheat flour;
  • 1 teaspoon ground ginger;
  • 0.5-1 teaspoon of ground cinnamon (real, highest quality, how to distinguish it from fake, I wrote in the recipe for cinnamon rolls);
  • ¼ teaspoon ground nutmeg;
  • 1/6 teaspoon ground cloves;
  • ¼ teaspoon turmeric;
  • ¼ teaspoon salt.

For the sugar glaze:

  • 100 g powdered sugar;
  • 1.5-2 tablespoons of lemon or orange juice.

How to bake:

The amount of seasonings can be reduced and their types varied to suit your taste. For example, those who are not delighted with the aroma of cinnamon can replace it with vanilla (on the tip of a knife or a bag of vanilla sugar); and instead of nutmeg you can take a pinch of cardamom!

Preparing choux honey dough.

Melt honey, sugar and butter cut into pieces over low heat or in a water bath until the butter and sugar grains melt.

Beat the eggs with soda and pour the fluffy mixture into the heated mixture.

Mix quickly, and when the mass begins to foam with such small bubbles, remove from heat and immediately begin adding the sifted flour. Add it, mix it with a spoon and look at the consistency of the dough. At first it’s liquid, you can’t knead it with your hands, and it’s also hot. Then the dough becomes thicker and becomes not so hot - yeah, you can move on to kneading with your hands. When you see that there is almost enough flour (the dough should be soft, so that it almost does not stick to your hands, but not too hard), add spices along with the last portion of flour: ginger, cloves, nuts, cinnamon and salt.

Mix. This is the dough for gingerbread: soft, warm, fragrant, and a pleasant brown hue!

Dust the table with flour, roll out the ginger-honey dough to 1 cm thick and cut out circles using a glass.

Place them on a baking sheet, covering it with oiled parchment, leaving a distance of 2-3 cm between them, since the dough will rise during baking, and put them in the oven, preheated to 200-210C. While the first batch is baking (and this is a portion for 1.5-2 baking sheets), you can prepare the second.

Bake for 10-12 minutes, until the color of coffee with milk and light golden brown. The gingerbread cookies will rise, become twice as tall, and turn brown – it’s time to take them out! Don't keep them in the oven longer as they will harden. So that they bake and remain soft, I place a ladle of water on the bottom of the oven, and cover the finished ones with a towel for 10-15 minutes.

And you can bake treats not only in the form of circles, but in different figures! Imagine how interesting they turn out! Christmas trees, bells, stars, even deer, sleighs and bags of gifts!

This is how they come out after baking, pot-bellied (I mean, bags) – like they’re full of gifts!

While the gingerbread cookies cool, we will make the glaze for them. Pour powdered sugar into a bowl, squeeze out the citrus juice and stir with a spoon until smooth.

Glaze the cooled gingerbread cookies; it is convenient to pour the glaze onto the top with a teaspoon and spread it directly with your finger. And lick it slowly while no one sees! 😀

As the glaze hardens, it becomes matte white, like store-bought ones.

And if you want to make painted ones, then make the icing a little thicker, place it in a pastry bag, cut off the very tip of the corner and... create! This is an amazingly exciting activity for the whole family; children of all ages will especially enjoy painting the treats!

After half an hour, the glaze will harden and turn white, each gingerbread will be covered with sugar patterns, like a frosty window with frost.

Only, if the children are small, it is still better to use less spices and make the gingerbreads simply honey. You can hear a large number of recipes on how to make Christmas cookies with icing from friends and acquaintances, but, as always, you want to use the simplest one in order to get delicious baked goods and spend a minimum of effort and time on their preparation.

A simple recipe will require the following ingredients:

  • 350-360 g flour;
  • A pinch of nutmeg;
  • 160-170 g sugar;
  • Two teaspoons of cinnamon;
  • ½ teaspoon of soda;
  • 50-60 g honey;
  • Two teaspoons of ginger;
  • A pinch of salt;
  • A pinch of cloves;
  • 110-120 g butter;
  • Chicken egg.

Having collected the necessary ingredients for making gingerbread cookies with glaze, you should start rolling out the dough and start preparing the powdered sugar.

Preparing the dough:

  1. Place all the ingredients except the egg in a blender bowl, and first cut the stick of butter into cubes.
  2. All components of the future test are mixed together.
  3. Next, the resulting mass is laid out on the working surface of the table.
  4. A depression is carefully made in it, into which a chicken egg is broken. Everything is mixed until a dough is obtained.
  5. The finished dough needs to be slightly flattened and wrapped in cling film, put in the refrigerator for half an hour.

After the dough has rested and cooled, you need to roll it out to a layer one centimeter thick. Next, using special molds from the finished layer of dough, you can cut out New Year's figures so that Christmas gingerbread cookies with glaze create a joyful mood. Most often, figurines of Christmas trees, festive balls for the Christmas tree, bunnies, bears and stars are made from dough.

Next, the gingerbread cookies are laid out on a baking sheet covered with baking paper and placed in a preheated oven for 15 minutes. Ready-made Christmas gingerbreads must cool. While they are cooling you can make the frosting for the Christmas cookies. To prepare it you will need egg white, lemon juice and powdered sugar. The glaze is made as follows:

  1. The protein is ground with powdered sugar until smooth.
  2. New Year's cookies are painted with the finished glaze.
  3. The painted gingerbread cookies must harden so that the design does not smudge.

An interesting recipe for gingerbread dough from TV presenter Yulia Vysotskaya. To prepare it you will need the following products:

  • 100-120 g brown sugar;
  • One egg;
  • 250-260 g flour;
  • 10-12 g ginger;
  • 100-120 g butter;
  • 50-55 ml maple syrup;
  • Half a teaspoon of dry ginger;
  • 100-110 g cream;
  • Spoon of baking powder;
  • Three umbrellas of carnations;
  • Spoon of cinnamon.

To make it, you need to grind cinnamon and cloves into powder and mix with dry ginger. Fresh root vegetables are peeled and grated. Syrup, grated ginger, cream and spices are poured into a suitable container and placed on the stove. The mixture is brought to a boil and cooled.

The butter is ground with sugar, an egg and half of the flour are driven into it and everything is mixed, then a mixture of cream and spices is poured in, the remaining flour and baking powder are added and the mixture is beaten. The finished dough is placed in the refrigerator for 12 hours. After the mass has cooled, you can make gingerbread with icing for the New Year from it.

Types of glaze

White icing looks especially attractive on gingerbread cookies. To make it, you need to knead a bar of white chocolate and melt it in a water bath, add a spoonful of milk or cream, and a little powdered sugar. All ingredients are thoroughly mixed using a blender.

Classic icing for Christmas cookies is prepared from egg white, powdered sugar and lemon juice according to the method described above.

You can surprise guests who decide to wish them a happy holiday with gingerbread cookies with caramel glaze. To do this you will need:

  • ½ cup brown sugar;
  • Vanillin;
  • Three large spoons of milk;
  • A glass of powdered sugar;
  • 20-30 g butter.

It is prepared as follows:

  1. Melt the butter, pour milk into it and add brown sugar, boil for a minute.
  2. Add half a glass of powdered sugar to the resulting mixture, beat and let cool, add the rest of the powder and vanilla. Beat again.

To obtain colored glaze to decorate New Year's cookies, you will need the following products:

  • Two teaspoons of powdered sugar;
  • 0.4 teaspoon almond extract;
  • A glass of powdered sugar;
  • Two teaspoons of sugar syrup.

The preparation looks like this:

  1. The powder is mixed with milk, and sugar syrup is added to the resulting composition. Everything is whipped.
  2. The finished glaze is laid out in small containers, and food coloring of the desired color is added to each of them.

Orange glaze will add an unusual taste to holiday cookies. For it you will need:

  • 3 large spoons of orange juice;
  • ¾ cup powdered sugar.

How to make orange glaze:

  1. Pour the juice into a container and gradually add powder to it.
  2. Mix the juice and powder thoroughly. The consistency will be liquid.

Painting New Year's gingerbread cookies using chocolate glaze is also very popular. To do this you will need:

  • Two large spoons of cocoa;
  • Two glasses of powdered sugar;
  • 20-22 g butter;
  • Vanillin;
  • 4 large spoons of milk.

Softened butter is mixed with powdered sugar, vanillin and cocoa. The mass is ground, milk is added to it, everything is mixed until smooth.

How to frost and decorate a Christmas gingerbread cookie

Before applying the glaze to the gingerbread, you need to lightly moisten its surface with ordinary boiled water. Next, using a pastry syringe, carefully trace the outline of the gingerbread, and then you can paint it as your imagination dictates.

To make the glaze dry faster, the painted cookies should be placed in a preheated oven for a couple of minutes.

Christmas gingerbread cookies can be made in the shape of snowmen, snowflakes, keys, Christmas trees, etc. Most often, cookies of any shape are covered with completely white or cream glaze; New Year's toys, twigs, snowflakes and everything that can be associated with New Year's symbols are drawn on it.

A beautiful Christmas gingerbread made with your own hands can become not only a great holiday gift, but also a wonderful original Christmas tree decoration if, during its preparation, you make small holes in the dough into which you can pass ribbons.

As soon as I think about the New Year, I immediately hear music from the ballet “The Nutcracker” and the magical dance of the Sugar Plum Fairy. And with them come the aromas of pine and spices, the taste of New Year's gingerbread on the tongue, so fragrant and elegant! What are you doing in December? And I go to visit and give gingerbread cookies to everyone! New Year's and merry, I bake them myself and then decorate them! No, there is no New Year without a treat! And if so, then today we will bake Gingerbread Gifts. Do you want to decorate the Christmas tree with them, or give them to your friends?

So, we don't need anything special. Everything is very simple: flour, honey, sugar, butter, spices, eggs.

First, let's prepare the spices.

Grind the spices in a coffee grinder.

Be sure to sift to remove large particles.

Grind the sugar in a coffee grinder, at the same time it will be saturated with the aromas of spices. You can immediately use powdered sugar.

Sift flour with powdered sugar.

Melt honey with butter in the microwave.

Break the eggs into a bowl, add salt and spices, mix.

Add honey and butter and gradually add flour. Knead soft dough.

Roll out the dough and cut out gingerbread cookies with cookie cutters. Bake at 190 degrees until browned. Gingerbread cookies bake quickly! 7-10 minutes. I don’t grease the sheet with anything, I sprinkle it with flour.

Remove the finished gingerbreads from the sheet after cooling.

While the gingerbread cookies are cooling, I will prepare the icing for decoration. I don't use any frosting mixer! I mash everything with a fork. For the glaze you will need the white of one egg, powdered sugar, a few drops of lemon juice and coloring.

The glaze should have a paintable consistency, not runny, but not runny either. Divide the glaze into 2 parts. Leave 13 white for painting. Paint the rest in the colors you want for decoration.

Using a pastry envelope, trace the outline of each gingerbread.
