Based on nutritional standards in a health care facility, an approximate 10-day menu should be drawn up and agreed upon with Rospotrebnadzor institutions.

The diet should provide a ratio of proteins, fats, carbohydrates - 1:1:4. At least 50-60% of the protein must be of animal origin (meat, fish, milk, dairy products, eggs); about 20% of the total fat should be vegetable oils containing polyunsaturated fatty acids (sunflower, corn, soybean).

In suburban inpatient recreation and health institutions for children, 5 meals a day are recommended with intervals between meals of no more than 4 hours.

The distribution of caloric content of the daily diet is as follows: breakfast - 25%, lunch - 35%, afternoon snack - 15%, dinner - 20%, 5th meal - 5%.

1 hour before bedtime, children are given a glass of fermented milk product (kefir, fermented baked milk, yogurt, etc.) as a second dinner.

  • Nowadays, school camps are opened in many schools during the holidays. Despite the fact that this practice has been around for several years, school leaders, teachers and parents still have many questions about various aspects of the functioning of a school camp.

    We will need:

    SanPiN 2.4.4.2599-10 “Hygienic requirements for the design, maintenance and organization of work in health institutions with day-time stay for children during the holidays” (hereinafter referred to as SanPiN 2.4.4.2599-10);
    - Resolution of the Secretariat of the All-Union Central Council of Trade Unions dated May 11, 1990 N 7-22 “On the Model Staff of Administrative, Economic, Pedagogical, Medical, and Service Personnel of Children’s Health Camps.”

    Currently, the opening of children's school camps with daytime stays for children during the holidays is becoming increasingly widespread. In connection with this, there is a need to understand how many children should be in the group and how many counselors should monitor them.

    According to clause 1.3. SanPiN 2.4.4.2599-10 health institutions with daytime stay for children (hereinafter referred to as health institutions) are organized for students of educational institutions during the summer, autumn, winter and spring holidays.

    Health institutions are staffed by students from one or more general education, sports, art schools and other institutions for children and adolescents, divided into groups of no more than 25 people for students in grades 1-4 and no more than 30 people for other schoolchildren.

    According to para. 2 clause 1 of the Resolution of the Secretariat of the All-Russian Central Council of Trade Unions dated May 11, 1990 N 7-22 “On the Model Staff of Administrative, Economic, Pedagogical, Medical, and Service Personnel of Children’s Health Camps” establishes that the occupancy standards for a detachment (group) of children’s health camps with round-the-clock stay are extended to ALL TYPES of health camps and labor and recreation camps.

    The number of teaching staff is indicated in paragraph 2 of the Resolution of the Secretariat of the All-Union Central Council of Trade Unions dated May 11, 1990 N 7-22 “On the Model Staff of Administrative, Economic, Pedagogical, Medical, and Service Personnel of Children’s Health Camps.”

    Thus, the number of teachers and counselors is established on the basis of: two teacher positions and one counselor position for each group of schoolchildren aged 10 to 14 years (no more than 30 people) and each group of schoolchildren aged 6 to 9 years - 25 people. For every two or three squads (groups), one position of substitute teacher (counselor) is established.

    The number of circle leaders in the camp is set at the rate of 1 unit per 4 groups with an average capacity of up to 20 people each, except for dance, choir and rhythmic circles, where the average capacity is at least 30 people. For these employees, a monthly summary recording of working time is established at the rate of 3 hours of group work per day.

    The number of accompanist positions in the camp is established taking into account the number of choral, dance and other clubs that require musical accompaniment; time spent by the accompanist on accompanying morning exercises, preparing and conducting cultural and sports events. For these employees, a monthly summary recording of working time is established at the rate of 4 hours of work per day.

    If there is a swimming pool, bathhouse (beach) on a pond in the camp, the position of instructor-methodologist for physical education and sports is established at the rate of 1 unit for every 4 squads (groups).

    To organize tourism work with children and adolescents, the camp establishes the position of a tourism instructor-methodologist.

    If the number of employees working at a school camp does not comply with the rules, then write written requests demanding that violations of the law be eliminated.

    It is recommended to fence the perimeter of the children's health camp area with a fence and a strip of green space or other natural fencing.

    When designing children's health camps, buildings for children's accommodation should have no more than two storeys. The area of ​​sleeping quarters is provided at a rate of at least four square meters per child; in newly constructed buildings the bedroom capacity should be no more than five people.

    Bedrooms must be separate for boys and girls and equipped with fixed beds. In each bedroom it is recommended to install bedside tables, chairs (stools), a table, and a wardrobe (cabinets) for storing clothes and shoes.

    Sanitary facilities for children are provided separately for boys and girls. Each toilet room is equipped with washbasins and toilet cubicles with doors.

    On the territory of children's health camps, it is allowed to use outdoor cesspool toilets, sewered outdoor toilets and stationary dry closets provided with artificial lighting. Conditions for washing hands with soap will be provided in the toilet or near the toilet. There must be soap constantly.

    Water for domestic and drinking purposes must meet, in terms of safety indicators, the hygienic requirements for water quality of centralized drinking water supply systems.

    Optimal air temperature: in sleeping areas is +20...+24°C, permissible - not lower than +18°C; in the dining room, recreation areas, lobby, premises for cultural purposes and for classes +18…+24°С; gyms - +17...+20°С, showers - not less than +25°С.

    The levels of natural and artificial lighting in the premises of children's health camps must comply with the hygienic requirements for natural, artificial and combined lighting of residential and public buildings.

    It is recommended that the number of seats in the dining hall of the canteen be calculated to serve all children at the same time (in one shift). The canteen building provides conditions for washing children's hands near the dining room (or at the entrance to the dining room) and a place for undressing children. The dining room is equipped with the necessary technological, refrigeration and washing equipment. All technological and refrigeration equipment must be in good working order. When operating technological equipment, the possibility of contact between food raw materials and ready-to-eat food products must be excluded.     When preparing dishes, gentle technologies must be observed: boiling, baking, poaching, sautéing, stewing, steaming, cooking in a combi oven. When preparing dishes for children, frying is not used.

    The weight of portioned dishes must correspond to the yield of the dish indicated on the menu. If the cooking technology is violated, as well as in case of unpreparedness, the dish is allowed to be served only after the identified culinary deficiencies have been eliminated and brought to readiness.

    • use of the following food products: meat and offal of all types of farm animals that have not passed veterinary control; meat of wild animals; blood and liver sausages; ungutted poultry; waterfowl meat; canned food with broken cans, bombed cans, cans with rust, deformed, without labels; butter with a fat content below 72%; eggs with contaminated shells, with notches, “tek”, “broken”, etc.;

    Meals should be organized in accordance with a sample menu approved by the head of the children's health camp, designed for at least two weeks, taking into account the physiological needs for energy and nutrients for children of all age groups and the recommended daily food sets for organizing children's nutrition. In year-round children's health camps, a seasonal menu is developed.

    Breakfast should consist of a hot dish, a sandwich and a hot drink. Lunch should include an appetizer (salad or portioned vegetables, herring with onions), a first hot dish, a second hot dish, and a drink. The afternoon snack includes a drink (milk, fermented milk drinks, juices, tea) with bakery or confectionery products without cream, fruit; It is allowed to serve cottage cheese or cereal casseroles and dishes. Dinner may include fish, meat, vegetable and cottage cheese dishes, salads, vinaigrettes and hot drinks. The second dinner includes a fermented milk drink (can be supplemented with confectionery (cookies, waffles, etc.).

    Children should be provided with a 24-hour drinking regime. Water must meet safety requirements for drinking water.

    The drinking regime is organized in the following forms: stationary drinking fountains; industrially produced water, packaged in containers (bottled), non-carbonated; boiled water (boiling for at least five minutes from the moment of boiling). Boiled water is changed every three hours.

    The daily routine should include: night sleep for at least nine hours (for children from 7 to 10 years old, at least 10 hours), daytime sleep (rest) - at least 1.5 hours, children's meals at least five times (breakfast, lunch, afternoon tea, dinner, second dinner), morning exercises, sports and cultural events, hygienic, health and hardening (water, air) procedures, as well as rest and free time. Children get up in the morning no earlier than eight o'clock. For children 15 years and older, it is allowed to replace daytime sleep with reading books and board games.

    Morning exercises are carried out daily in the open air. In rainy weather, morning exercises are recommended to be done in well-ventilated areas. The duration of morning exercises is at least 15 minutes.

    It is recommended that children bathe in open water on sunny and windless days, at an air temperature of at least +23°C and a water temperature of at least +20°C. The recommended duration of continuous stay in water in the first days is 2-5 minutes with a gradual increase to 10-15 minutes. Swimming immediately after eating (less than 30 minutes) is not recommended. When organizing children's bathing, the presence of a medical professional is mandatory.

    Children are bathed in specially designated and equipped areas. On the shore, sun canopies are equipped and changing cabins and toilets are installed.

    General cleaning of the territory and all premises is carried out before the start of each shift using detergents and disinfectants.

    In all areas where children are staying, twice a day the technical staff of the children's health camp carry out wet cleaning using detergents.

    Carpets are cleaned daily using a vacuum cleaner. Window glass is washed as it becomes dirty, but at least once per shift.

    In washrooms, showers, laundry rooms, girls' hygiene rooms and toilets, door handles, washbasin taps, release handles of toilet tanks and urinals, and toilet seats are washed daily with hot water using detergents and disinfectants.

    Toilets must be cleaned using disinfectants as they become dirty, but at least twice a day. Toilets are washed using brushes and brushes with hot water using detergents and disinfectants.

    Bath days for children are held at least once every seven days.

    In the bathhouse and showers it is necessary to use individual accessories: shoes, towel, soap, washcloth.

    The opportunity to wash children in the shower should be provided daily.

    Bedding (mattresses, pillows, blankets, sleeping bags) should be beaten out, aired, air dried or dry cleaned once before the summer season.

    Bed linen and towels are changed when soiled, but at least once a week.

    The premises of the children's health camp should be free of insects and rodents.

    The territory of the children's health camp must be kept clean. The area is cleaned at least once a day.

    Healthy meals are provided for children in institutions. We need to develop a sample menu. There are requirements for the production of culinary products and fortification of ready-made dishes.

    Institutional areas must be cleaned daily before children enter the area. In summer, in dry weather, it is recommended to water the court surfaces and grass 20 minutes before the start of sports activities. In winter, the area must be cleared of snow and ice.

    1.     4. During the operation of the children's health camp, it is not allowed to carry out routine or major repairs in the places where children stay.
    5. The canteen building provides conditions for washing children's hands near the dining room (or at the entrance to the dining room) and a place for undressing children.
    6. It is not allowed to use utensils with broken edges, cracks, chips, deformed, damaged enamel, plastic and aluminum cutlery.
    7. The dining room is cleaned daily: floors are washed, dust is removed, radiators and window sills are wiped down.
    8. There should be no insects and rodents in the dining room; if they are detected, disinfestation and deratization measures are taken.
    9. Acceptance of food products and food raw materials into children's health camps is carried out in the presence of documents confirming their quality and safety. Food products with signs of poor quality are not allowed, as well as products without accompanying documents confirming their quality and safety, and without labeling, if the presence of such labeling is provided for by the legislation of the Russian Federation.

    Persons who have undergone professional hygienic training, certification and medical examination in the prescribed manner are allowed to work in the camps.     Each camp worker must have a personal medical book of the established form, which contains the results of medical examinations and laboratory tests, information about past infectious diseases, preventive vaccinations, marks on completion of professional hygienic training and certification.
