  3. Then add vanillin, flour, salt, baking powder and mix until smooth.
  4. Fill the molds 3/4 full using a regular tablespoon.
  5. Place 1.5 tsp on each cupcake. Nutella chocolate spread.
  6. Using a toothpick, twist the chocolate paste into a spiral so that part of the paste goes inside.
  7. Place the muffin tins in the preheated oven and bake for 20 minutes.
  8. After this, cool the cupcakes and place a spoonful of chocolate spread on top.

Strawberry Apricot Cupcakes

You will need:

  • 5 pieces. apricots
  • 9 pcs. strawberries
  • 2 eggs
  • 180 g flour
  • 80 g sugar
  • 6 g baking powder
  • 50 g chocolate

Preparation:

Cupcakes with raspberry cream

You will need:

  • 150 g butter or margarine
  • 150 g sugar
  • 4 eggs
  • 100 g chocolate
  • 2 tsp. baking powder
  • 150-200 g flour
  • 200 g raspberries
  • 300 g curd cheese (Almette, Buko or Philadelphia)

Preparation:

  1. Cut the chocolate into cubes.
  2. Grind the butter with sugar until the mixture becomes white.
  3. Add eggs, mix.
  4. Add chocolate and stir again.
  5. Add flour, baking powder and knead the dough.
  6. For the cream: mix the egg with sugar, add cheese and raspberries, mix thoroughly.
  7. Fill silicone molds 1/2 full with dough, fill the rest with cream and bake in the oven at 180ºC for 30 minutes.
  8. After this, remove the cupcakes from the oven, let them cool and remove from the molds.


Lemon Yogurt Blueberry Muffins

You will need:

  • 100 g flour
  • 20 g oat flour
  • 1 tsp. baking powder
  • 75 g sugar
  • 3 tbsp. l. vegetable oil
  • 3 tbsp. l. yogurt
  • 1 egg
  • 2 tbsp. l. frozen blueberries
  • zest of 1/2 lemon

Preparation:

  1. Mix flour, oatmeal, sugar, baking powder, lemon zest.
  2. In a separate container, mix vegetable oil, yogurt, egg. Then combine the two resulting mixtures and mix well.
  3. Sprinkle blueberries with 1 tbsp. l. flour, mix and add to the dough.
  4. Place in molds and bake at 180ºC for 35 minutes.


Chocolate cupcakes with curd filling

You will need:

  • 270 g flour
  • 2 tbsp. l. cocoa powder
  • sugar (100 g for dough and 4 tbsp for filling)
  • 100 g melted butter
  • 100 g melted dark chocolate
  • 200 ml kefir
  • 3 eggs (2 eggs and 1 white for the dough and 1 yolk for the filling)
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 250 g cottage cheese

Preparation:

  1. For the filling: mix cottage cheese, 4 tbsp. l. sugar and 1 yolk.
  2. For the dough: first mix kefir, 2 eggs, 1 egg white, melted dark chocolate, melted butter and 100 g of sugar. Separately mix flour, cocoa, baking powder and soda. Then combine all the ingredients and mix well.
  3. Place the dough in the muffin tins 2/3 of the way up and place the curd filling in the middle.
  4. Bake at 180ºC for 20 minutes.


Gingerbread cupcakes with pear

You will need:

  • 300 g pear
  • 350 g wheat flour
  • 150 g sugar
  • 250 g sour cream
  • 100 ml sunflower oil
  • 2 chicken eggs
  • 1 tbsp. l. honey
  • 2 tsp. baking powder
  • 1 tbsp. l. ground dried ginger
  • 1 tsp. cinnamon

Preparation:

  1. Mix flour, sugar, dried ginger in a bowl (you can take fresh, then you need to peel the ginger root and grate it on a fine grater), cinnamon, baking powder and a pinch of salt.
  2. In another container, mix sour cream, eggs, sunflower oil and honey.
  3. Mix all ingredients to form a thick dough.
  4. Wash the pears, peel them, remove the seed pods and chop finely. Then add them to the dough and mix so that the pear pieces are evenly distributed throughout the dough.
  5. Use a teaspoon to distribute the batter into the muffin tins.
  6. Bake the cupcakes in the oven for 15 minutes at 180ºC.

1. Cupcake with cream

Products:

  • Eggs - 4 pcs.
  • Sugar - 250 gr.
  • Cream 30-35% - 250 gr.
  • Starch - 125 gr.
  • Flour - 125 gr.
  • Vanillin or vanilla sugar
  • Baking powder - 10 gr.

How to make a cream cake:

Beat the eggs well with sugar and vanilla, while continuing to beat, add room temperature cream. The mass will become thinner. Mix flour, starch and baking powder separately. Let's sift into the mass.

Beat with a mixer until smooth. The mass is smooth, without lumps. Pour the dough into the mold.

Bake at 160 degrees for about 50 minutes. Check readiness with a wooden stick.

Look how fluffy the cupcake turns out! Not dry, moist, softest! And it doesn’t look like a biscuit at all, it tastes exactly like a cupcake!

You can pour chocolate on top or brush it with boiled condensed milk, or you can simply sprinkle it with powdered sugar.

2. Leopard cupcake

Products:

For the cupcake:

  • Soft butter - 100 gr.
  • Sugar - 200 gr.
  • Eggs - 4 pcs.
  • Vanilla essence - 1 teaspoon
  • Flour - 150 gr.
  • Corn starch - 50 gr.
  • Baking powder - 1 teaspoon
  • A pinch of salt
  • Cocoa

How to make Leopard cake:

Beat butter and sugar until white.

Stir the eggs with a fork, add vanilla essence and, whisking, combine with the butter in 4-5 additions. Sift flour, cornstarch, salt and baking powder.

Using a spatula from bottom to top, add the flour mixture in 3 additions.

Divide the dough into 2 parts. Set aside one part. Divide the other into larger and smaller ones.

Add 2 tbsp to a large one. spoons of sifted cocoa into a smaller part add 1/4 tbsp. spoons of cocoa + 1/2 tbsp. spoons of flour.

Prepare a baking dish. Grease with oil and dust with flour, lay paper on the bottom.

We put each part of the dough in a bag, it’s more convenient to work with. Using white dough, draw 3 circles at a distance from each other.

Draw a line from the smallest bag of light brown dough on top of the dark dough.

Take a bag of dark dough and squeeze it on top of the light brown one.

We close it completely. Now cover the dark brown one with the light dough. Along the edges and then on top so that the dough does not spread.

Once again make circles from the dark dough, but this time in the place where the light dough was originally.

Apply dark dough on top, then light brown dough and cover everything with dark dough. Cover everything with white dough.

If there is any dark dough left, spread it on top. Place in a preheated oven at 180 degrees for 40 minutes.

It is better to bake 2 cake layers and place them on top of each other, then the cake will look richer. And the leopard print pattern will be more expressive.

The description of the process turned out to be long, but it is much easier to do than to describe. These cake layers are perfect for a cake and 2 cake layers will be enough.

3. Lemon cake

Products:

  • Margarine - 200 gr.
  • Lemon - 2 pcs.
  • Sugar - 150 gr.
  • Baking powder - 1 pack
  • Wheat flour - 2 cups
  • Chicken egg - 4 pcs.
  • Milk - 200 ml.

How to make lemon cake:

The set of products is very simple and not expensive! Grate the margarine on a coarse grater! Margarine can be replaced with butter, it will be a little more tender. Mix margarine with sugar and eggs!

You don’t need to try to grind the margarine until smooth, this is necessary so that during the baking process you get delicious holes in our cupcake!

Using a fine grater, remove the zest from the lemon. We also need lemon pulp; we will grate it on a coarse grater.

Mix the lemon mixture into the dough, pour the finished dough into a greased springform pan. And put it in a preheated oven to bake for 30-40 minutes.

Check the readiness of the cake with a splinter. Since baking powder and lemon will immediately begin to make friends, everything needs to be done very quickly so that the process of rising the dough occurs already in the oven.

It is also advisable to prepare the form in advance. Grease it with a piece of margarine or butter!

And don’t rush to take the lemon cake out of the mold right away, let it cool a little and enjoy your tea with the lemon cake! You can decorate with powdered sugar and fruit.

4. Curd cake with pear

Products:

  • Flour -225 gr.
  • Butter - 115 gr.
  • Sugar - 250 gr.
  • Cottage cheese - 200 gr.
  • Eggs - 3 pcs.
  • Baking powder - 1/2 teaspoon
  • Pear - 2-3 pcs.
  • Vanilla

How to make curd cake with pear:

Beat butter at room temperature with sugar. Add cottage cheese (previously rubbed through a sieve) and stir until smooth, add vanilla.

Beat in the eggs one at a time and mix well.

Add flour sifted with baking powder.

Knead the dough well.

Grease and flour the pan and place the dough.

Cut the pears into circles and stick them into the mold.

Bake at 170 degrees for about an hour until golden brown. Check readiness with a match.

5. Cupcake “Snowflake”

Products:

  • Condensed milk - 1 can
  • Egg - 1 pc.
  • Starch - 6 tbsp. spoons
  • Soda - 0.5 teaspoon
  • Lemon zest

How to make Snowflake cupcake:

Everything is whipped and poured into a “brick” shape. Bake at 180-200C until done (20 minutes), check with a splinter.

Make a cut at the highest part to prevent the cake from cracking.

6. Cupcake “Capital”

Products:

  • Prunes – 0.5 cups
  • Dried apricots – 0.5 cups
  • Raisins – 0.5 cups
  • Walnuts – 1 cup
  • Chicken eggs - 3 pcs.
  • Granulated sugar – 1 cup
  • Flour – 1 cup
  • Margarine – 100 gr.
  • Slaked soda – 0.5 teaspoon
  • Juice of half a lemon
  • Honey – 2 tbsp. spoons

How to make the Stolichny cake:

The most painstaking part of this recipe is cutting the dried fruits. It is better to take prunes without seeds, as it is easier and faster to cut them. Cut into small pieces.

We also cut dried apricots into pieces. We wash and dry the raisins.

Chop the walnuts into several pieces (but not into powder, pieces of nuts should be felt in the cupcake).

Break eggs into a bowl and add granulated sugar. Mix them with a whisk (not a mixer!) until smooth. Gradually add flour and mix with a whisk or spoon. We extinguish the soda with vinegar and put it in the dough.

Melt the margarine until liquid and pour it into the dough (cool the margarine a little first so that it is not too hot, otherwise the eggs in the dough may curl). Add lemon juice.
And liquid honey (it’s better to take light honey). Now add chopped dried fruits and nuts.

Mix everything well. The dough itself should not be too thick (the consistency is approximately the same as for charlotte, i.e. the dough should flow from a spoon).

Pour the dough with dried fruits into a mold, which we first grease with oil or line with baking paper.

Place in the oven, which is heated to 150-160 degrees. Bake in the oven until crust forms, about 35 minutes.

The cake is best eaten cold. This is delicious.

7. Yogurt cake with prunes

Products:

  • Drinking yogurt, any flavor possible - 1 glass
  • Eggs - 3 pcs.
  • Sugar - 2-3 tbsp. spoons
  • Flour - 1.5 cups
  • Butter (melt) - 40 gr.

How to make yoghurt cake with prunes:

Heat the oven to 180 degrees. Grease a cake pan or small ramekins with butter. Pour boiling water over the dried fruits for 5 minutes, then drain the water and dry them on a napkin, transfer them to a bowl and mix with a pinch of flour.

Separate the whites from the yolks. In a bowl, beat the yolks with sugar, vanilla, salt until white, while continuing to beat, pour in the vegetable oil and melted butter, then add yogurt, stir, add sifted flour and baking powder, stir so that there are no lumps, add prunes and raisins.

Separately, beat the whites into a strong foam. Gently mix the dough with the whites until smooth, pour the mixture into the mold.

Bake until golden brown, check doneness with a wooden skewer. Turn the finished cake onto a wire rack, carefully remove the bottom and side of the pan, and let cool completely.
