  • You will need 100 g of oil
  • I add sugar and salt according to my taste preferences, but in general you need 2 large spoons of sugar and one large spoon of salt
  • Pour 20 ml vinegar

With these salad ingredients, without sterilization, you end up with two jars of 700 gm each. I rarely make such small portions, so I crumble and cut all the ingredients for the appetizer in approximate quantities, and add salt and sugar to taste.

Tomatoes for salad can be crooked, uneven, or even spoiled. We wash all the components and chop them with a knife. I don’t grate carrots because they turn out too fine and when cooked they just fall apart. I recommend either shredding or cutting into cubes using a vegetable slicer or food processor. I also don’t cut tomatoes and cucumbers very finely.

When you have everything cut, put it in a container according to size and set it on low heat, just don’t add vinegar, but you do need sugar and salt. Wait until it boils, stir and set aside for 40 minutes. Now add 9% vinegar and boil for another 5 minutes.

  • Round onions, carrots and non-hot peppers, take 1 kg each
  • Garlic 6 regular heads
  • You will need one glass of sugar
  • Add salt to your taste
  • Two large tablespoons of oil.

Please note that this version does not contain cucumbers, this is the whole point of the recipe.

We cut the washed vegetables into strips, tomatoes and garlic into rings. If your tomatoes are large, divide the rings in half to create half rings. Place all the vegetables in a bowl or pan, add some salt and leave for six hours. It is better to cover the salad bowl with a towel to prevent debris or anything else from getting in there. After this time, drain all the liquid, this way you will get rid of the bitterness of the green tomatoes.

In a frying pan, heat vegetable oil to a boil, then pour it into a container with winter salad, add sugar in the specified volume and stir. Place the salad in jars, cover the top with a lid and place in a container with water. This is a sterilization process and it will literally take half an hour.Pour water into a metal container, place your jars of green tomato and garlic salad in there and wait for it to boil. Time for half an hour and seal with lids. Don’t forget to turn the jars over and wrap them in warm clothes or a blanket.

Korean green tomato salad, the most delicious recipe

Korean green tomato salad is prepared from:

  • Unripe tomatoes, you will need 2 kilograms of them
  • 4 yellow or green peppers
  • 8 cloves garlic or two regular sized cloves
  • Oils 100 gr
  • A small spoon of hot pepper, the pepper must be exclusively dried and ground
  • Two regular spoons of salt
  • Granulated sugar 100 gr
  • Vinegar 80 gr
  • Dill, but it can be added as desired. I prefer parsley or cilantro.

Please note that hot peppers should only be dry, this is the whole highlight of the Korean salad.

The jars need to be doused with boiling water or dumped in bubbling boiling water, this will be quite enough. I chop and cut all the vegetables either into strips or cubes, I cut the tomatoes as for a regular salad. For this Korean recipe, I process the garlic through a grater. We transfer all the products for the salad into a container, add vinegar, oil, salt and sugar to taste or according to the recipe, do not forget about hot pepper.

Slowly and carefully mix all the products and leave for 15 minutes. During this time, juice will appear, but there is no need to drain it. After the specified time, compact the salad into jars and pour in the juice that formed within 15 minutes. If there is not enough juice, add slightly salted water and fill the jars to the brim. The water should only be boiled and cooled.

We seal our jars with plastic lids and put them in the refrigerator. I have been storing Korean green tomato salad for the winter in the basement for almost a year, to be more precise, up to 9 months. The longer it sits, the richer it becomes.

What do you think can be prepared from small unripe tomatoes, that’s right, salad. After all, it doesn’t matter what size the ingredients are, the main thing is that they are not spoiled and clean. Among housewives you can more often hear such a phrase as Ukrainian salad for the winter or a recipe for Don salad from green tomatoes, which is exactly what we are talking about. You can prepare a lot of snacks from unripe tomatoes for food, the main thing is that they are tasty. And so, for lovers of unusual dishes, I recommend preparing a winter snack with rice and tomatoes. It consists of:

  • Three kilograms of green or brown tomatoes
  • One kilogram of onions and the same amount of carrots
  • 300 grams each of rice cereal, sunflower oil and sugar
  • 100 grams of salt
  • 70 grams of vinegar

Cut the tomatoes into cubes or slices, pour the oil into the same container and place on low heat. As soon as the yushka appears, add clean rice and cook for 10 minutes. Chop the carrots and onions, add them to our boiling appetizer, add granulated sugar and salt. All this must be cooked until fully cooked, usually for at least 20 minutes. Ingredients:
2 kg green tomatoes,
500 g carrots,
500 g onions,
500 g sweet pepper (preferably multi-colored),
2 heads of garlic,
1 bunch of greens,
1 stack vegetable oil,
½ cup Sahara,
3 tbsp. salt.

Preparation:
Cut the tomatoes into circles, sweet peppers and onions into half rings, chop the carrots into thin circles. Finely chop the garlic with a knife and chop the greens. Place all the vegetables and herbs in a bowl, mix and leave for 6-7 hours. Add salt and sugar. Separately, heat the vegetable oil and pour it into the bowl with the vegetables. Mix thoroughly and place in sterilized jars. Cover the jars with boiled lids, place in a wide saucepan, fill with boiling water up to the hangers and put on fire. Sterilize from the moment of boiling for 15 minutes. When the time is up, roll up the jars, turn them over, wrap them and leave until cool.

Ingredients:
2 kg green tomatoes,
1 kg of sweet multi-colored peppers,
1 kg carrots,

I can only say one thing about this recipe - after preparing this winter salad, you will definitely lick your fingers. I have been preparing it for about 15 years, as soon as green tomatoes appear. And this salad is one of the first to be eaten. I just wholeheartedly recommend you try it.

Ingredients:

  • green tomatoes - 3 kg
  • carrots - 1 kg
  • onions - 1/2 kg
  • bell pepper - 200 gr.
  • vegetable oil - 300 ml
  • sugar - 1 glass
  • salt - 5 tsp.
  • ground red pepper - 2 tsp.
  • tomato sauce - 0.5 l
  1. Cut the tomatoes into cubes. In this salad, I like the vegetables to be chopped into small pieces.

I want to warn you - green tomatoes contain the dangerous poison solanine. Therefore, green tomatoes should not be eaten fresh. But when fermented and canned, this poison is destroyed and does not pose any danger

2. Carrots can be grated using a Korean carrot grater. or you can cut it into cubes. Cut the onion into cubes.

3. We also chop the bell pepper. I usually use red or yellow peppers for color, then the salad turns out bright and beautiful.

4. Place all vegetables in a deep saucepan and mix. You can leave it for a while so that the vegetables release juice. I admit, I cook right away.

5. Pour a can of tomato sauce over the vegetables.

6. Add vegetable oil, stir everything well. Place the pan on the stove and bring to a boil.

7. After boiling, add salt, sugar and ground red pepper. Cook the salad for about 3 hours over low heat, stirring occasionally.

Please note - we prepare the salad without adding vinegar.

8. At the end of cooking, put the salad into clean jars, cover with lids and sterilize in hot water. Roll up the lids tightly, turn over and leave until completely cool.

A simple recipe for a salad of green tomatoes, carrots and onions for the winter

The composition of this salad is similar to the previous one, but here we will add fresh tomatoes to the salad. It is very easy to remember the amount of ingredients - for 1.5 kg of green tomatoes there is 0.5 kg of other vegetables.

Ingredients:

  • green tomatoes - 1.5 kg
  • carrots - 0.5 kg
  • onions - 0.5 kg
  • bell pepper – 0.5 kg
  • red tomatoes - 0.5 kg
  • vegetable oil - 1 cup
  • sugar - 1 tbsp. l.
  • salt - 1 tbsp. l. (I use minimal salt, but adjust to taste)
  1. Chop the vegetables. Again, I repeat - you can cut it as you please, the shape doesn’t matter. But in this recipe we cut green tomatoes, onions and bell peppers into half rings, and grate the carrots on a coarse grater.

2. Red tomatoes need to be ground to a porridge state. You can grate it, or you can put it through a meat grinder, or it’s even more convenient to grind it using a blender. Choose the method yourself.

3. Place all the vegetables in a deep saucepan and put on fire. Bring to a boil, add salt and sugar. Simmer the salad for about 1 hour over low heat under the lid. During this time, do not forget to stir several times.

4. 15 minutes before the end, add vegetable oil and boil for another 5-10 minutes.

5. Since this salad is without vinegar, it is advisable to sterilize jars of ready-made salad in boiling water. Be sure to boil the jar lids for a few minutes. After you cover the salad with lids, turn the jars upside down.

Green tomato salad without sterilization - a recipe for the winter

Preparations for the winter can be preserved without sterilizing the preparations themselves. To do this, you just need to pre-sterilize the jars and lids. But this method is only suitable for preparations that we heat treat, that is, cook or stew. How to sterilize jars and almost everything.

But we have a salad recipe with fresh vegetables, which means that for long-term storage, jars of salad need to be sterilized. Or simply close the jars tightly with plastic lids and store in a cool place.

Ingredients:

  • green tomatoes - 2 kg
  • bell pepper - 1 pc.
  • garlic - 1 head
  • parsley or dill
  • salt - 1 tbsp. l.
  • sugar - 2 tbsp. l.
  • vegetable oil - 100 ml
  • vinegar 9% - 50 ml

  1. We cut all the ingredients: divide the tomatoes into 4 parts, cut the pepper into strips, finely chop the garlic. Chop the greens. Place in a saucepan, add salt, sugar and vinegar. You can adjust the amount of vinegar at your discretion.

2. Mix all this beauty well and leave to marinate at room temperature for 24 hours. During this time, the vegetables will release juice and become softer.

3. Transfer the salad into pre-sterilized jars. Pour 1 tbsp into each jar. l. vegetable oil. We close this salad with plastic lids, which need to be immersed in hot water for a minute.

It is advisable to store such preparations in the refrigerator or cellar.

If you want to roll up such a salad for the winter with a metal lid, then I advise you to sterilize the jars with the preparation for an additional 20 minutes.

Delicious salad of green tomatoes for the winter with garlic

A simple and nutritious salad that uses only green tomatoes and garlic. And if you have unripe tomatoes left at the dacha, then use this recipe.

Ingredients:

  • green tomatoes - 4 kg
  • chopped garlic - 1/2 cup
  • parsley and dill - to taste
  • salt - 1/2 cup
  • sugar - 1/2 cup
  • vegetable oil - 1/2 cup
  • vinegar 9% - 1/2 cup
  1. Cut green tomatoes into 4 parts. Place them in a deep bowl. Add all the ingredients at once - salt, sugar, vinegar, vegetable oil.

2. Finely chop the garlic and herbs and add to the tomatoes.

3. Mix the salad thoroughly with your hands so that all ingredients are mixed. Leave the salad for 3-4 hours at room temperature, during which time we stir it every 30 minutes.

4. Place the juicy salad in clean jars and sterilize for 15-20 minutes. And if you don’t want to preserve, then simply cover the preparations with plastic lids as in the previous recipe.

You can prepare snacks - bright, beautiful and appetizing - from the following vegetable set: 3 kilos of green tomatoes, 1 kg of onions, 2 kg of carrots, 500 ml of mild tomato sauce, 5 black peppercorns, 2 full glasses of refined sunflower oil, a quarter cup otsa 9% (or 1 tbsp. 30% preservative), 2 tbsp. rock salt and 6 tablespoons of sugar. For color contrast, it would be nice to add sprigs of fresh herbs.


So, the vegetable components of the dish are thoroughly washed, if necessary, they are certainly peeled, and then cut into medium-sized slices (do not chop the vegetables too much or even chop them into large pieces). Next, to pour tomato sauce into a separate bowl (depending on the desired spiciness of the future preparation, this product is taken spicy or vice versa), and supplemented with otsot, lean refined oil, rock salt and granulated sugar. The marinade is thoroughly mixed until the spice crystals dissolve in it and combined with the previously chopped main components. Lastly, grain black pepper is added.

The mixture should sit, absorb the aromas of the marinade, and release its own juice. For this she will need several hours of time. Of the main ingredients for the preparation you will need: 3 kg of tomatoes that have not yet reached maturity, that is, brown or even green, 5-6 bell peppers, 3 onions and the same number of large carrots, 1 glass of granulated sugar, 1 full tbsp. l. rock salt, half a glass of apple 4% octa, 180-200 ml of refined vegetable oil.

Vegetables on “Green tomato salad for the winter” recipes prepared in the standard way: washed, peeled, rinsed once more and cut into convenient slices. To be more precise, the onions are cut into half rings, the carotel is rubbed into neat thin threads, the sweet peppers are chopped into oblong strips, and the tomatoes into small slices. These components are mixed in one wide bowl.


Refined lean oil, apple cucumber, non-iodized rock salt and granulated sugar are added to the vegetable slices. The mixture is carefully stirred and placed in a warm place for 20 minutes to release the juice. At the end of the specified time, the salad is mixed again and placed in pre-washed and dried small jars, adding the juice released during infusion to the vegetables. The containers are covered with tin lids and placed to sterilize in slowly boiling water for 35-40 minutes. wrapped in a blanket, and after cooling, transferred to a cool place for winter preservation.


Recipe 3 – “hunting” version of blockage

Seen on “Green tomato salad for the winter” photo The next snack option immediately makes you want to try it. “Hunter’s” seaming is combined in equal proportions with other vegetables, and includes the following list of products: 0.2 kg of unripe tomatoes, sweet peppers and cucumbers, 300 g of white cabbage, 100 g of carrots, 1 onion, 1-2 garlic cloves, several sprigs of parsley with dill, ottovoya essence (approximately 10 ml for each 1-liter jar), salt, vegetable oil (2 tablespoons per jar).

The peeled onion is finely diced. The washed carotel is cut into cubes. Sweet peppers without stalks and seeds are crushed into cubes. The cucumbers are cut into semicircles (by the way, if they are overripe or have a hard peel, then it needs to be peeled off). After washing, green nightshades are chopped into medium slices or pieces of arbitrary shape, but of small size. White cabbage is finely chopped. Garlic cloves are passed through a press. All prepared vegetable ingredients are mixed and salted to taste (it is advisable to add a little salt to the mixture, this will correct the released juice in the future).
