If you need less, do half a portion or even a quarter.

Need to:

  • Minced beef (in principle, you can use any minced meat, including chicken or turkey) – 1 kilogram
  • Bread (preferably black, such as Stolovoy or Stolichny) – about 200 grams (we have 5 slices)
  • Milk – 200 ml (1 glass)
  • Onion – 1 large onion
  • Carrots – about 300-400 grams
  • Chicken eggs – 10 pieces (for this dish, choose smaller eggs, large ones do not fit well into the “nests” and leak onto the baking sheet)
  • Table salt - approximately 2.5 level teaspoons
  • Ground black pepper - to taste (we usually rotate the pepper grinder over the entire surface of the minced meat 2-3 times)
  • Margarine or vegetable oil - just a little to grease the pan or baking sheet

Preparation:


Peel the carrots and grate them on a fine grater.


Trim the crusts off the bread slices, break the crumb into small pieces and pour in milk, let stand for 10-15 minutes.


When the bread is soaked in milk, stir and grind with a spoon until it becomes a homogeneous mass without large lumps of bread. (If you make minced meat yourself and do not buy ready-made ones, you can break the bread together with the crusts, soak it in milk, and then pass it through a meat grinder along with the meat).


The onions need to be peeled and finely chopped (if desired, you can also fry in vegetable oil until golden brown - then the taste of the onion will be less pronounced).


Place minced meat, grated carrots, bread soaked in milk and chopped onion in one bowl. Mix everything thoroughly until smooth, adding salt and pepper while mixing.


Lightly beat 2 eggs with a fork, mixing the whites and yolks, add the eggs to the minced mixture and mix again.


Divide the resulting mass into 8 approximately equal parts.


Using hands dipped in cold water (so that the minced meat does not stick to your hands), we form a “nest” from each part: first we form something like a ball, then we slightly flatten it on two opposite sides to the shape of a cutlet and, pressing with our fingers, we make a depression-“nest” (watch our video recipe!). Place the “nests” of minced meat in a deep baking tray greased with margarine or butter or in a baking dish.


Carefully break and pour one egg into each “nest”, add a little salt to the eggs and, if desired, pepper.


Place the baking sheet or mold in an oven preheated to 180-190 degrees (this is a medium heat level or slightly above average, so that the oven warms up, turn it on 10-15 minutes before placing the baking sheet there). Place the baking tray at medium height. Bake ours in the oven at the set medium heat level for 40-45 minutes. For the last 5 minutes, you can increase the heat to maximum (and if your oven has a grill and an air circulation function, all this can also be turned on) so that our “nests” of minced meat are also browned. Then remove from the oven, place on plates and serve. Potatoes in any form (fried, boiled, baked, mashed) are perfect as a side dish, and pasta, vegetables, rice or buckwheat are also not excluded.

How to cook meatloaf with egg inside in the oven

To prepare such a roll, it is better to use fillet of a large bird. I took fillet of a domestic broiler cockerel. If you have small fillets, take several pieces.


Grind the minced meat for the roll in a meat grinder, or buy ready-made in the store. You can add finely chopped onion.


Using a sharp knife, cut the chicken fillet, but not all the way. You should have the appearance of an open book.


To form the main layer for the roll, place the prepared fillet between two layers of cling film. Beat it on both sides with a kitchen hammer. The film helps preserve all the pieces of fillet, and the board and hammer remain clean.


Remove the top layer of film, sprinkle the poultry meat with spices and salt.

Spread the homemade minced meat over the fillets and compact lightly.


Place thin slices of boiled carrots and unwrapped crab sticks on the minced meat. You can use a vegetable peeler to cut carrots. This will make it very thin.


Pre-boil small chicken eggs for 6 minutes. Soak the eggs in cold water and remove the shells. Place whole boiled eggs on a layer of crab sticks.


Soak the dried apricots in advance in orange juice or just warm water, place them near the chicken eggs.

When the dish is completely ready, turn off the oven and leave the roll for 30-40 minutes.


Place fresh herbs on an oval plate.


Place the meatloaf in the center of the dish. You can place the vegetable side dish next to the roll or serve it separately.

You don't have to use chicken to make meatloaf with an egg inside. You can use duck breast or turkey fillet instead. You can also use pork loin, but in this case it is better to replace the minced pork with chicken. If your family loves baked cheese, you can add it to the recipe. To do this, 15-20 minutes before readiness, sprinkle the roll with grated cheese.

Before serving the roll, you can cut it with a thin knife. But this should be done immediately before the meal so that the meat does not have time to dry out.

Step 1: prepare the ingredients.

First, turn on and preheat the oven to 200 degrees Celsius. We clean the boiled chicken eggs from their shells, rinse under running water to remove small fragments along with a bunch of green onions and dry the eggs with paper kitchen towels to remove excess liquid. Now we proceed as desired, cut each egg lengthwise into 2 halves, leave them whole and cut into rings up to 1 - 1,5 centimeters. Regardless of your choice, transfer the prepared ingredient into a deep bowl.
Then shake the greens over the sink to remove excess moisture, place the green onions on a clean cutting board, chop finely, transfer to a deep bowl and add to it 1 kilogram of minced meat “Assorted”. Cut off the paraffin rind from the hard cheese, place it on a cutting board, cut into cubes with a diameter of up to 1 centimeter and transfer the crushed dairy product into a deep plate. We also put on the kitchen table all the spices indicated in the recipe, salt and 1 chicken egg.

Step 2: form meatloaf with egg and cheese.


Drive into a bowl with minced meat and onions 1 chicken egg without shell, add a little salt, all the spices indicated in the ingredients and mix the mass with a tablespoon until smooth.
Spread a sheet of baking paper on the countertop and pour it onto its surface. 1 a tablespoon of vegetable oil and spread the fat around the entire perimeter of the sheet using a baking brush. Then we put the minced meat on it and form it into a rectangle with the diameter 20 to 30 centimeters with a layer thickness of up to 1 - 1,5 centimeters. Carefully fold the baking paper while simultaneously rolling the minced meat into a roll so that the egg and cheese filling is inside the meat casing.
We do not remove the baking paper, but fold it into an envelope and place the resulting “bag” in a non-stick baking dish.

Step 3: bake meatloaf with egg and cheese.


Check the temperature of the oven and if it is hot up to 200 degrees Celsius, We place the form with the still raw roll in it on the middle rack. Bake the roll for 40 - 45 minutes until fully prepared. Thanks to the oiled paper, the roll will in any case be covered with a golden brown crust, and the meat will be baked more efficiently.
After the required time has passed, remove the form with the finished meat product from the oven, holding it with a kitchen towel, and place it on a cutting board previously placed on the kitchen table. Using a kitchen spatula, remove the roll from the container, transfer it to a large flat dish, let it cool slightly and then remove the baking paper from it. Then cut the roll into large portion pieces up to 3 - 3,5 centimeters, arrange on plates and serve hot for dinner, lunch or breakfast. Or cool the roll to room temperature, cool it in the refrigerator and serve it on the holiday table as an appetizer instead of sausages.
