The dough for pancakes with yogurt is fluffy. Curdled milk pancakes: recipes

Pancakes are the most delicious and satisfying delicacy, the recipe of which is passed down in families from generation to generation and has its own unique characteristics. This glorious dish evokes associations with warm days of childhood, grandmother and raspberry jam. Everyone knows that if grandma takes out a large cast-iron frying pan, then there will certainly be delicious pancakes for breakfast or dinner.

This dish takes its roots back to pagan times. Pancakes got their name in honor of the goddess of love and beauty Lada; they were prepared at a certain time of the year (spring) and for a certain holiday. Sometimes pancakes were baked with a layer of applesauce and jam. Pancakes are mentioned in many folklore genres: fairy tales, proverbs, songs. “Where there is a pie with cereal, there I am with my hand; where are the pancakes, here we are, and where are the pancakes, that’s okay” - a perfect example of this. They also talked about little Brownie, who was very fond of pancakes; under the cover of darkness, this little thief would sneak into the house and lick all the dishes, eating them from them at the same time.

On Maslenitsa, pancakes are not inferior to pancakes, and on Wednesday, according to the old and good tradition, mothers-in-law prepared pancakes for their sons-in-law. In Tula, as a sign of special attention, the son-in-law was served a plate of pancakes. After all, it is with this dish that you can express all the love that fills your heart. That’s why Wednesday was nicknamed “Gourmet”, and the sons-in-law played an important role in it.

Recipe for lush pancakes with yogurt: how to make it delicious

The recipe for making yogurt pancakes is not simple, with its own sequence and tricks. You need to beat a couple of eggs in a large bowl, mixing with a pinch of salt and sugar. Beat the mixture well with a whisk. Add vanillin to the pre-sifted flour and mix everything.

Pour yogurt into the egg mixture in a small stream. It is best to let the yogurt brew to room temperature. Mix everything thoroughly and let the dough stand for 15 minutes.

The fire should be medium! Melt a piece of vegetable oil in a frying pan and add the dough with a small spoon. Fry the pancakes for 3-4 minutes on each side until browned. It is recommended to serve the pancakes piping hot, because later they will harden and become less tasty. The best way to decorate curdled milk pancakes is to serve them with delicious jam and tea. The jam can be of any flavor and it won’t be too much at all.

How to cook fluffy pancakes with yogurt

To make the pancakes tender, you need some experience. Sometimes it's worth adding a little flour or vice versa. Soda is also no joke; too much of it degrades the taste and color; instead of a golden crust, the pancakes may turn out dark. But if you are preparing pancakes with apples (especially if these are homemade and sour apples), then neutralizing the soda, due to malic acid, will make the pancakes fluffy.

Also for pancakes, the quality of yogurt is of great importance. This issue should not be ignored. If there is no product that inspires confidence, then you can prepare pancakes with kefir, the main thing is that the preparation contains a fermented milk product.

The main thing is that everything comes with experience. The best recipe has been measured over the years, but pancakes remain the fastest and favorite dish in many families.

Fluffy buttermilk pancakes: recipe (photo)

I recommend making lush pancakes with yogurt, the best recipe for which I described for you today. I know that many housewives sometimes spend a very long time searching for a recipe for the perfect pancakes - soft, fluffy and airy. Frankly, I, too, was not satisfied with the result of my attempts in this field for quite a long time, until I found a recipe for my grandmother’s pancakes in my mother’s notebook.

For me, at one time it became just a lifesaver - it would seem nothing special, a standard set of products used, but if you follow all the advice and do everything correctly, the result is beyond praise.

My grandmother always prepared her pancakes only with yogurt, and I, planning to try this new recipe for the first time, mentally rejoiced, since I almost always have this fermented milk product in my refrigerator.

So, having made sure that I had everything I needed at hand, I began the process, on the one hand, anticipating a delicious dinner, and on the other, still a little afraid that lush pancakes would again remain only in dreams.

Well, as I already said, my grandmother’s recipe did not disappoint – neither then, nor all subsequent times. I really hope that it will be ideal for you too. So I’m looking forward to telling you all my grandmother’s secrets.

Ingredients

Ingredients needed to make grandma's pancakes:

  • half-liter jar of curdled milk
  • 1 chicken egg
  • pinch of salt
  • a couple of tablespoons of sugar
  • 1 tsp soda
  • 400 g wheat flour (premium grade)
  • sunflower oil (for greasing the pan)

How to cook fluffy pancakes with yogurt: step-by-step recipe with photos

  1. First, mix the amount of flour we need and a teaspoon of soda, sift it a couple of times. Frankly, this is the first time I have come across this method of adding soda, because it is usually added directly to a fermented milk product to cause a reaction. But I didn’t deviate from the recipe and did just that.
  2. Next, pour the curdled milk into a deep bowl, in which we will knead the dough. This must be done in advance, since it must be at room temperature.
  3. Add salt and sugar to a bowl with sour milk (determine the amount yourself) and break the egg.
  4. And now the easiest way is to arm yourself with a mixer in order to transform it all into a homogeneous mass or mix everything thoroughly with a whisk.
  5. All that remains is to pour the mixture of flour and soda into the resulting mass, and then mix everything well again.
  6. This must be done very actively and diligently, since we will not mix the dough any more. As I understand it, this is the main secret of making grandma’s fluffy pancakes...
  7. We now leave the thoroughly mixed dough alone for about half an hour - during this time small bubbles should appear on its surface. It is their formation that indicates that it is time to put your favorite frying pan on the fire.
  8. When it warms up thoroughly, use a silicone brush to thoroughly grease the pan with sunflower oil. Now we return to the dough - we must remember all the time that it is no longer possible to mix it. Using a tablespoon, very carefully scoop out the dough, keeping all the bubbles, and place it in the pan.
  9. Well, this is probably where all the wisdom ends - lush pancakes on yogurt grow before our eyes, we turn them over and admire the beautiful crust and unprecedented height (I say, this is the best recipe!).
  10. I also really like the fact that these don’t absorb excess oil at all and turn out incredibly tasty... Well, of course... They’re grandma’s!
  11. This is such a pile of beauty and deliciousness I got!

Step 1: Prepare flour and baking soda.

First, using a fine mesh sieve, sift the required amount of wheat flour into a deep, dry bowl. We cannot avoid this step; due to it, this ingredient becomes looser, drier, saturated with oxygen and gets rid of any kind of debris. Then add baking soda to the flour and mix them with a whisk until smooth.

Step 2: prepare eggs, sugar and salt.

Next, using the back of a kitchen knife, beat the chicken eggs one by one and throw the whites and yolks into a new deep bowl. Add salt and sugar there and beat these ingredients with the same broom until lightly fluffy. Let’s not be too zealous, devote just a couple of minutes to this process and move on.

Step 3: prepare the dough.

Add yogurt to a bowl with beaten eggs and add baking powder again. Then we begin to add sifted flour and baking soda to the resulting mass.

We act gradually, adding them in small portions, spoon by spoon, while kneading the dough of medium thickness, similar to very heavy cream. After this, we lay out the remaining ingredients on the countertop, as well as the equipment that will be needed to prepare the dessert, and proceed to the next, in fact, almost final step.

Step 4: prepare fluffy pancakes with yogurt.

Turn on the stove to heat between the lowest and medium levels and place a frying pan on it with the required amount of vegetable oil. After some time, using a tablespoon, lower the first portion of dough into the heated fat, trying to form an even circle 1 centimeter thick. In the same way, lay out another 3-4 pancakes, at a short distance from each other; two centimeters of free space between each product is enough. Fry the rounds on both sides until golden or dark beige, but if you like them very browned, then until brown. It will take about 2–3 minutes.

As soon as the flour products reach the desired consistency, using a kitchen spatula, move them to a countertop covered with baking paper and leave them there to absorb excess fat. Without wasting a minute, add oil to the frying pan and cook the rest of the pancakes in the same way until the dough is finished, and then you can start tasting!

Step 5: serve fluffy pancakes on yogurt.

Lush pancakes with yogurt are served warm as a dessert for a sweet table. They are served in different ways: either on a large flat dish or in portions on plates. As an addition to such a delicious treat, you can offer honey, jam, cream, sour cream, butter, chopped fruits and berries, or different types of syrups, such as chocolate, fruit, vanilla, citrus, or the one you like best. Well, it’s nice to savor such a dish with fresh, hot, just brewed drinks, tea, coffee, jelly, compote or something else to taste. Cook with pleasure and enjoy!
Bon appetit!

The pancakes should be baked inside, but at the same time slightly tender; if you like a denser dough, then it is better to cover the frying pan with a lid while preparing this dish, leaving a small gap for steam to escape;

There is no need to extinguish soda with vinegar, this will be done by a dairy product - yogurt, it also contains acids;

This dish will turn out more appetizing if you cook it with creamy fats: margarine, butter;

An alternative to baking soda is baking powder; one packet, that is, 15 grams, is enough;

Some housewives add vanilla sugar, cinnamon, nutmeg, raisins, chopped nuts or dried fruits to the dough.

A very simple recipe for fluffy pancakes with yogurt. Save the recipe in bookmarks so as not to lose it. After all, you and your loved ones will surely like these tender, fluffy pancakes.

1. Mix yogurt, eggs, salt, sugar. Stir. Then add soda (cannot be slaked). The pancake batter will be covered with bubbles (see photo).

Add flour, gradually, preferably sifted. The dough should be thick so that the spoon stands for a few seconds or slowly tilts (see video below ⬇). It is difficult to say the exact amount of flour, since yogurt varies in fat content and thickness.

3. Next, fry the pancakes with yogurt in the same way as regular pancakes. Place in a heated frying pan with vegetable oil (note that the dough is so thick that we do not “pour the dough into the frying pan,” but rather “spread it”). Cover with a lid. Fry over medium heat.

When it becomes clear that the edges have browned and the dough on top has baked a little, you can turn the yogurt pancakes over. Fry the pancakes with yogurt on the other side.

Bon appetit!

And it’s very easy to make yogurt. You need to put the milk in a warm place for a day.

Step-by-step recipes for kefir pancakes (lush without yeast): classic, with oatmeal, pumpkin, apple slices

Option 1: Classic kefir pancakes (fluffy without yeast)

Pancakes are fried in the classic way in a frying pan in oil, the size can be adjusted to your liking, some people prefer large flat cakes, others like miniature balls. Most often, one spoon of dough corresponds to a pancake.

Ingredients

  • two eggs;
  • 0.25 l of kefir;
  • 0.18 kg flour;
  • 20 g sugar;
  • 0.1 liters of oil (fat, a mixture can be used);
  • 10 g soda.

Step-by-step recipe for classic fluffy kefir pancakes without yeast

Place eggs for pancakes in a bowl, add sugar and salt, beat for a minute with a whisk.

It’s better not to take cold kefir for the dough; warm it up slightly. Add a pinch of salt to it, add baking soda, stir well. After the soda has quenched, pour it into the eggs. Stir everything together with a whisk.

Add the recipe flour. If the kefir is suddenly watery, a little more product may come out than indicated in the list of ingredients. Stir the dough until smooth. Bring to the consistency of thick sour cream. When scooping into a spoon, the mixture should slowly flow out in a thick stream. Leave for ten minutes.

Pour oil into a frying pan and place it on the stove. Turn the heat up a little higher than medium and heat it up. You can check the readiness of the fat with a drop of dough. If, when it gets into the oil, it begins to bubble and move quickly, you can proceed.

Place pancakes on a heated frying pan with a tablespoon. You need to immediately give the flatbreads a round shape, or oval, so that they turn out neat.

After the flatbreads are fried on one side and small craters appear on the top of the dough, turn them over. As soon as the second side is cooked, remove the pancakes from the pan and add the next portions of dough.

There is no need to add more sugar to the dough than indicated in the recipe. In this case, it will fry and burn very quickly, and the pancakes may remain raw inside. It is better to use sweet additives when serving: honey, condensed milk, jam, cream.

Option 2: Quick recipe for kefir pancakes (lush without yeast)

A great way to knead pancake batter in two minutes. It will take about ten more minutes to fry. As a result, in less than a quarter of an hour you can prepare a wonderful breakfast or afternoon snack for the whole family.

Ingredients

  • a glass of kefir;
  • spoon of sugar;
  • 0.2 tsp. salt;
  • 1 egg;
  • 1 tsp. soda;
  • 1.3 cups flour;
  • oil.

How to quickly prepare pancakes with kefir without yeast

Break the eggs into a bowl and add salt and sugar. Add kefir. Immerse the mixer, beat it all for one minute.

Add flour and soda, beat the pancake mixture for another minute with a mixer. The dough is ready!

Place the frying pan on the stove. If you use a vessel with a large diameter, you can fry all the pancakes in two times. Pour in the oil, the thickness of the layer should be half a centimeter, warm it up.

Spread regular pancakes with a spoon and fry on both sides until golden brown. Transfer to a plate. You can lay down napkins or disposable paper towels to absorb excess oil.

To prevent the pancakes from being very fatty and high in calories, they need to be fried in well-heated oil. If the dough is placed in fat that is not hot enough, it will absorb it, it will turn out tasteless, and the fluffiness will suffer.

Option 3: Fluffy oat pancakes with kefir without yeast

Recipe for kefir pancakes, fluffy and without yeast, but with oatmeal. A wonderful recipe for a healthy and not quite ordinary dish. If you don’t have ready-made flour, you can grind the flakes. But then be sure to sift so that large particles of oatmeal do not fall in. After kneading, it is better to let the dough stand for a while.

Ingredients

  • 0.1 l kefir;
  • 0.1 kg fine oat flour;
  • 5 g soda;
  • 1 tsp. Sahara;
  • a little salt, butter.

How to cook

Beat the egg with sugar and salt. There is no need to achieve fluffy foam, just bring the mass until smooth.

Mix kefir with soda. We wait a few seconds. As soon as the reaction stops, mix with the previously prepared eggs.

Add oatmeal and knead the dough. Set aside to let it sit for a while. You can use some wheat, corn, rice or buckwheat flour.

After about fifteen minutes, put a frying pan on the stove, add refined oil, heat, but not until smoking.

Mix the dough with oatmeal thoroughly, scoop it up with a spoon and place it in the heated fat. Fry the pancakes on both sides. You can also serve oatmeal baked goods with sour cream, jam or condensed milk.

Dietary pancakes are prepared in the same way according to this recipe, but for frying it is advisable to use a non-stick frying pan. It is oil that significantly increases the calorie content of dishes. If the presence of granulated sugar confuses you, then you can add honey instead or use other substitutes.

Option 4: Fluffy kefir pancakes without yeast (with apple)

The recipe for the simplest apple pancakes, which are prepared without yeast, turns out golden brown and aromatic. You can use absolutely any apples at your discretion. There are recipes based on puree, but here only pieces of fruit are used; no preliminary heat treatment is necessary. Place eggs, sugar, salt in a bowl for kneading pancake dough and beat a little. Pour in kefir. If the product is cold, then heat it up, but watch carefully, it should not curdle. Stir everything together.

Add flour and baking powder, which can be replaced with baking soda if desired; in any case, you don’t need to extinguish anything, lactic acid is enough. Knead into a thick, spoonable dough.

Pour previously prepared pieces of apples in lemon juice into the dough, stir again, and you can start frying the pancakes.

Spoon the dough with apples onto the frying pan, leveling the top a little so that the thickness is even. Fry on both sides. Cook the pancakes until the dough is finished. Periodically add oil to the pan as its amount will decrease.

You can cook fluffy rooks in the same way with the addition of raisins. But it is advisable to first wash it well and soak it in water for juiciness. You should not add in large quantities; for this test, 80-90 grams is enough.

Option 5: Fluffy pumpkin pancakes with kefir without yeast “My Sunshine”

Ingredients:

  • 160 g pumpkin;
  • 0.15 l kefir;
  • 0.25 kg flour;
  • a bag of ripper;

Kids usually ask me: “What are we having for dessert?” And I immediately serve them a plate with a lot of hot pancakes. You can cook pancakes every day. It is convenient to cook them with yogurt. When your milk has acidified and stood on the window for a couple of days, you can fry the pancakes. When milk reaches its expiration date and you don’t plan to drink it, then ferment it in the room, it will turn into excellent curdled milk, which will make excellent baked goods. The taste cannot be compared to anything else, which is why they are loved so much. On Sundays for lunch I often prepare pancakes, which produce an indescribable effect. The whole family instantly runs to the table and everyone pours tea to enjoy the delicious pancakes in the heat.

Required Products:
- 1 glass of curdled milk,
- 2 chicken eggs,
- 1 pinch of salt,
- 150 grams of sugar,
- 1 tea. l. soda,
- 1.5 full cups of flour,
- vegetable oil for frying.

Recipe with photos step by step:

Break the eggs into a bowl, add sugar and start whisking.

Pour the curdled milk into the dough and stir.

Add a teaspoon of baking soda and leave the dough for 10-15 minutes for the baking soda to activate.

Now add flour to the bowl to knead a thin dough.

Beat the dough with a whisk, add a little salt. Let the dough rest for about 10 minutes. I noticed that the dough for pancakes should always stand, then the pancakes will be fluffy and more tasty. But with pancakes it’s the opposite. Pancakes should be baked immediately after preparing the dough.

Pour vegetable oil into the frying pan until it covers the entire surface and a couple of millimeters up. Pour the pancakes into the frying pan with a spoon, fry on both sides under the lid.

Serve hot pancakes with yogurt along with hot tea. Bon Appetite!
