eggplants – 500 g;
onions – 3 pcs;
sour cream – 3 tbsp. spoons;
egg – 3 pcs.;
lemon juice;
wine vinegar - 2 tbsp. spoons;
vegetable oil;
salt - to taste.

How to cook:

    Cut the eggplants into small cubes.

    In a bowl, beat 2 eggs and combine them with the eggplants. Wrap the resulting mass in a plastic bag and put it in the refrigerator for one and a half to two hours.

    Cut the champignons and scald with boiling water. Fry the mushrooms in a frying pan, add salt.

    Separately, fry the thinly sliced ​​onion.

    Then mix the mushrooms with onions, pour in the sour cream. You can add water if necessary.

    Leave to simmer for ten to fifteen minutes.

    Remove the eggplants from the refrigerator.

    Fry them in vegetable oil until golden brown. It is better to do this in several batches so that the eggplants are placed in the pan in one even layer.

    Add salt to the fried eggplants.

    Then add a mixture of mushrooms and onions to the eggplants, add the juice of half a lemon and wine vinegar.

    After two minutes, you can remove the pan from the stove.
