Turkey in sauce with dried fruits. Turkey baked with dried fruits from Oksana Mysina Turkey fillet with dried apricots recipes

With apples and dried apricots (it is better to take turkey breast fillet for this dish), baked under foil - the dish is not quite ordinary, thanks to the use of fruits, but interesting and tasty.

Fruits give turkey meat not only an amazing aroma and unusual taste “notes”, but also make the meat softer and juicier. The number of apples in this dish can vary from 2-3 to 5-6. If you put fewer apples, it will only give a taste and aroma, and if you put more, then the “stewed” baked apples can be used as an unusual side dish, in our photos there is a variant with a large number of apples.

Need to:

  • Turkey fillet (breast) - 1.5 kilograms
  • Apples (sour or sweet and sour) - 4-5 large pieces (small ones can be 6-7 pieces)
  • Dried apricots - about 1.5 cups (250-300 grams)
  • Mustard (we have "Russian") - 1.5 teaspoons, you can "with a slide"
  • Honey - 3 tablespoons
  • Salt - about 30 grams (about 3 teaspoons)
  • Ground black pepper (or a mixture of peppers) - to taste, we have about 10 grams (about 2 teaspoons)
  • Butter or margarine - 15-20 grams (grease the baking dish)

Cooking:

Apples need to be washed and wiped, dried apricots should also be washed (or even better, scalded with boiling water) and allowed to dry slightly.

Wash the turkey fillet with running cold water, pat it dry with a paper towel, remove the films if necessary and cut into large pieces.

Arrange the turkey pieces on a cutting board and season with salt and pepper on one side.

Grease a baking dish with butter or margarine. We spread the pieces of turkey fillet in a single layer with the salted-peppered side down, after which we salt and pepper on the other side.

We prepare the sauce-filling, mix honey and mustard in a small cup until a homogeneous mass.

Pour the turkey fillet in the form with this sauce, distributing the filling evenly.

We remove the core from the apples and cut them into not very small pieces (we cut each apple into 8 slices, and each slice in half across, but it can be larger).

We spread dried apricots on top of the turkey, distributing it evenly: there are not enough dried apricots to form a continuous layer ( check out our video recipe!).

Put apples on top of dried apricots.

We cover the form with foil, fix the foil on the form, pressing the edges. You can put it in the oven on a baking sheet or on a wire rack at a medium height. If you have a metal or silicone mold, you can preheat the oven to a temperature of 200 degrees (this is the average heating level if your oven does not have a thermometer), put the dish in a hot oven and bake for 40 minutes. If the form, like ours, is made of heat-resistant glass or ceramic, it must be placed in a cold oven, the temperature is set to the same - 200 degrees, but by the indicated time we add 15 minutes to heat the oven.

After the specified time, we take out the form from the oven, remove the foil and again send it to the oven for another 10-15 minutes, so that our dish is slightly browned.

The singer, "7D", that she manages to maintain an excellent shape thanks to healthy eating habits and regular exercise. “Mostly in my diet are protein foods and vegetables. Proteins give a feeling of fullness, says the artist. - I eat fish, chicken, chicken liver. I always have snacks with me: a muesli bar or dried fruits. Ingredients:

Cooking:

“Take turkey fillet (0.5 kg), sunflower oil (3 tablespoons), mustard (1 tablespoon), garlic (3 cloves), 2 green apples, a handful of prunes and a handful of dried apricots. Soak dried apricots and prunes in water for an hour. Cut the turkey fillet into large pieces. Mix sunflower oil with mustard and garlic, which is cut into large plates. Coat the turkey with this mixture and marinate for 20 minutes. Combine a coarsely chopped apple with prunes and dried apricots and add to the turkey fillet. Then put in a cooking sleeve or wrap in foil and place in the oven. In an hour your dish is ready!”

Bon Appetit!

Peel 3 medium carrots and cut into 1cm thick slices. Deseed 1 large red bell pepper, cut lengthwise into 8 pieces. Peel 1 large white onion and cut into quarters or 8 pieces.

For the sauce, mix 200 g of cranberries with 100 g of sugar and 100 ml of drinking water. Bring to a boil and cook covered for 10 minutes. Beat with a blender, carefully strain through a sieve, salt and pepper. Reduce more, if desired, to thicken the sauce.

Salt and pepper 2 small turkey breast fillets and sear on all sides in olive oil until golden brown. Transfer the roasted turkey to an ovenproof baking dish. Put prepared vegetables to it, add about 200 g of dried fruits (figs, dried apricots, prunes) and a few sprigs of fresh thyme. Pour in half the chicken broth. Roast in a preheated oven at 180°C until the turkey is done, about 30 minutes. Serve with cranberry sauce.

Photos completely on the plate will not be due to commentators on the appearance of any product in the sauce.

We will need:

1. Turkey. I prefer turkey thigh. The breast seems a little dry to me, and the drumstick has little meat :-) Wings are good for soup.

2. Onions. Quantity as desired. I love onions, so I put a lot.

3. Sour cream. Again, the one that you prefer or the one that is in the refrigerator.

4. Carrots. Optional ingredient. I didn't use it in this case.

6. Prunes

You need very little dried fruit. Otherwise, it will be very sweet and the taste of the turkey will be completely killed. Look at the picture for an approximate ratio to meat

8. Flour. Shown in the photo, but not really needed. Dried fruits gave the necessary density to the sauce.

9. Vegetable oil for frying.

We start cooking.

Cut the turkey into small pieces. If there is a bone, then we cut it out, do not throw it away, but cook it together with the meat.

We throw the meat into a saucepan with heated oil, fry in boiling oil until the meat turns white and, reducing the heat to a minimum, but so that it boils slowly, close the saucepan with a lid.

While the meat is stewing in its own juice (already 10 minutes), chop the onions and dried fruits. We cut the onion arbitrarily, as you like, but you don’t need to grind dried fruits, especially prunes. Raisins remain as they are :-)

As soon as the onion is cut, we immediately lay it, raisins and dried apricots to the meat. Prunes are left to wait for their turn, otherwise they will boil and be completely unpresentable.

Don't forget to check the saucepan for water. Meat should be stewed, not boiled or fried.

Most often, you don’t have to top up, but just in case, keep a kettle of boiling water on hand. Sometimes you need to add half a glass of boiling water and mix gently. About 20 minutes before readiness (that is, about 25 minutes after the start of stewing meat), lay the prunes and salt the turkey.

We try the meat - the turkey should by this moment be completely ready to eat - that is, soft and melt in your mouth. After another 10 minutes, add sour cream to taste. I usually use 2-3 large tablespoons. If the sour cream is thick, then spoons with a slide.

After stirring the sour cream, we look at the density of the sauce. If in your opinion it is liquid, then you can add a teaspoon of flour and mix it thoroughly in a saucepan so that there are no lumps. Keep in mind that unroasted flour tends to thicken the sauce after a few minutes, so don't add too much at once.

Letting the sour cream boil over a tiny fire for 5-10 minutes, we get the finished product. It is not worth boiling sour cream for a long time, as it can turn into tiny grains and whey. It doesn't improve the taste at all.

That's all, consume with any side dishes, especially good with those who "love" sauces - potatoes in any form, buckwheat, rice, any pasta. To be honest, I would not give any raw vegetables or, for example, boiled green beans as a side dish. Not very good and stewed cabbage. But, here, as they say, the taste and color ...

It turns out delicious and unusual. The sweetness of dried fruits manifests itself when they hit the tongue, and if they don’t get caught, then the taste of turkey in sour cream remains.

Mediterranean turkey recipes can include a variety of seasonings, often with honey or a sweet sauce poured over the meat. "Sweet Meat" is one of the culinary hits that is becoming more and more popular in Russia. This turkey recipe includes shallots for a rich, onion-infused flavor.

Ingredients

(for 4 people)

  • 3 tablespoons sesame paste
  • 1 tablespoon honey
  • 1½ kg turkey fillet, cut into pieces
  • 5 tablespoons olive oil
  • 2 garlic cloves, finely chopped
  • a little saffron
  • ½ coffee spoon of cayenne pepper
  • ½ coffee spoon black pepper
  • ½ coffee spoon of coriander (cilantro) powder
  • 1 coffee spoon of ginger, diced
  • 250 grams of peeled shallots (do not chop!)
  • 100 grams of dried apricots
  • 130 grams of prunes
  • a little cinnamon

How to cook sweet turkey

Heat oil in a shallow non-stick frying pan. Throw in the saffron, cayenne, black pepper, cilantro, and ginger. Add the turkey pieces, shallots, garlic and brown the meat lightly on all sides.
Pour a little water into the pan and simmer for 3-4 minutes so that the meat absorbs the aroma of spices.
Add more water, close the lid and let it simmer for about 20 minutes.
Put dried apricots, prunes, cinnamon and salt to the meat. Cook another 30 minutes until most of the liquid has evaporated.

Remove a few tablespoons of meat sauce and dissolve sesame paste and honey in it. Pour the honey-sesame sauce into the meat and do not stir the contents.

Serve immediately. As a side dish, any pasta or rice is good.
