One of the most common dishes among European housewives is meatballs with gravy. This delicious delicacy is based on minced meat and fish.

It is very easy to prepare a fragrant dish so that later it would not be possible to tear household members away from it. The classic recipe for meatballs is based on minced pork.

For cooking, you will need the following set of ingredients:

  • pork neck - 1 kg;
  • tomato paste - 4 tbsp spoons (can be replaced with a liter of tomato juice);
  • 3 onions (medium);
  • round rice - 100 g (I take round);
  • garlic - medium head;
  • bay leaf - 2 pcs.;
  • allspice - 5 peas;
  • salt, black pepper;
  • paprika - 0.5 tsp;
  • ground ginger - a quarter of a teaspoon.

Cooking method:

I wash the pork several times in running water. Then I let it dry for a quarter of an hour, and, having cut it into chunks, grind it coarsely. I also pass peeled onions and garlic through a meat grinder. In parallel, I boil the rice until half cooked, drain the excess liquid.

I add the minced meat, boiled rice and half of the spices, mix everything well. I form the workpieces with my hands dipped in water, medium size. I fry them on both sides in a preheated pan greased with sunflower oil. Then I put it in a deep saucepan.

At the same time, I am preparing tomato filling. I take a liter of boiled cooled water and dissolve tomato paste in it. Then I pour this mixture into the pan, put the bay leaf and the remaining spices. I cook the sauce under the open lid for 10 minutes.

When the meatballs are overcooked and put in a stewing container, pour hot sauce on top and cover with a lid. The cooking process takes 40 minutes.

How to cook meatballs with gravy in a pan - a step-by-step recipe with rice

The taste of cooked food depends not only on the list of products used, but also on their quantity and method of stewing. So, for example, if you have very little meat, meatballs can be stewed right in the frying pan for a quick hand.

Required products:

  • pork or ground beef - 550 gr;
  • round rice - 100 gr;
  • carrots - 1 pc.;

I peeled the vegetables and washed them thoroughly. Then I grated the carrots on a coarse grater, and chopped the onion. Boiled rice almost until cooked.

Minced meat for cooking these babies, I prefer to take fresh, but this time I had a little frozen. In the defrosted meat, I added an egg, boiled rice and spices to taste. I mixed everything thoroughly.

I formed small balls and sent them to the freezer for a short time so that they grab and hold their shape better.

I fried vegetables in vegetable oil, literally lightly, then poured tomato juice into it and cooked it over low heat for another 10 minutes. After that, I poured sour cream into the evaporated tomato and vegetable gravy and let it boil.

The cooled blanks were placed directly in a skillet with gravy. Spooning a little the meatballs with gravy on top. I simmer them under a closed lid for 35 minutes over low heat. After about 20 minutes I drop in, add a little boiled water if necessary.

If you think that you can only cook a delicious meat dish from pork or beef, then you are greatly mistaken. Meatballs, which are cooked using poultry meat, have a very delicate taste and will easily win the sympathy of your family members.

To feed a small family you will need:

  • minced chicken or turkey - 300 g;
  • carrots - 3 pcs.;
  • onions - 1 pc.;
  • oatmeal - 100 g;
  • chicken egg - 1 pc.;
  • garlic - 1 clove;
  • tomato paste - 3 tbsp. l .;
  • water - half a glass;
  • salt, sugar, herbs.

Step-by-step recipe:

Step one... I grind the oatmeal along with peeled carrots and onions using a blender. I finely chop the parsley and a clove of garlic. Then I combine all the ingredients with minced meat, spices and an egg, mix well until smooth.

Step two. I turn on the oven to warm up to 180C. Form medium-sized round blanks, immediately spreading on a baking sheet. I bake them for 20 minutes, and at this time I prepare the filling.

I rub the carrots on a coarse grater, finely chop the onion. I lightly fry them in a frying pan with high sides and then pass them through a blender. To the resulting mixture I add paste, water, sugar and salt. Mix and send back to stove to bring to a boil.

Step three. I take out the meatballs from the oven and transfer them to the appropriate size pan. Pour in tomato sauce and simmer for about 15 minutes.

Unique meatballs in a frying pan without rice in sour cream sauce

For most housewives, rice is a traditional part of the meatball recipe. Although there are many recipes for preparing this dish without using it. Here is one of them.

To create a very tasty dish, you will need the following products:

  • non-frozen minced turkey - 400 grams;
  • 2 small onions;
  • carrots - 1 pc.;
  • garlic - 4 cloves;
  • dill - 1 bunch;
  • bread - 1 slice;
  • hops-suneli - 1 tsp;
  • sour cream - 350 grams;
  • flour - 1.5 tbsp. spoons;
  • salt pepper.

The first thing I do is prepare the meat filling. To do this, peel and finely chop the herbs, garlic and onions (I use half of the products stated in the recipe). I rub the floor of the carrots on a fine grater.

Then I add chopped greens and garlic, onions, and carrots softened in water to the meat base. I add spices and salt.

I mix the ingredients thoroughly and shape the blanks with wet hands. Before sending to the frying pan, I dip the meatballs in flour. I fry the balls on both sides.

At the same time, I chop the onion into cereal pieces and rub the remaining carrots on a coarse grater. Then I fry them in a skillet with high sides.

When a crust appears on the vegetables and the aroma begins to spread through the kitchen, I put the fried meat balls there. Pour sour cream on top, salt and pepper. I add water so that the balls are half covered. I cover and carcass for a quarter of an hour.

That's all very juicy meatballs with gravy in sour cream sauce are ready.

How to cook minced meatballs with rice and gravy in the oven - a simple step-by-step recipe

I spied this wonderful recipe from a friend who works as a cook in the dining room. The main thing is that it is prepared completely in the oven and does not require additional stewing in a saucepan.

To prepare this culinary, I'm not afraid of this word, "masterpiece" will need:

  • minced meat - 700 g;
  • rice - half a glass;
  • chicken eggs - 2 pcs.;
  • one large onion;
  • salt, ground pepper;
  • tomato sauce - 3 tbsp. spoons;
  • sour cream - 3 tbsp. spoons;
  • flour - 1 tbsp. spoon;
  • water - 2 glasses.

Cooking step by step:

Step one. First of all, I boil the rice, drain off the excess liquid, if it remains after cooking, and set it aside. While the cereal is cooling, I peel the onion and finely chop it (you can grate it on a fine grater).

In a large bowl, I mix the meat base of the dish with onions, spices and eggs. Then I add the cooled rice there and mix well again.

Step two. From the resulting mass, I form small balls and put them in a baking sheet with high sides, so that they do not touch.

Step three. Making the gravy is very simple. Pour sifted flour into a bowl, then add sauce and sour cream on top. We drive in everything with a whisk until a homogeneous mass is obtained. Add water and stir again.

Step four... Pour our meatballs with the resulting sauce and send them to the oven for 45 minutes. Cover with foil on top.

Serve such meatballs in portions with the heat. If I am expecting guests, I put them in clay pots and sprinkle with grated cheese on top.

Oven-baked meatballs, in my opinion, have a richer taste. Especially if they are covered with sour cream sauce and covered with hard cheese.

Required set of products:

  • meat (preferably poultry) - 600 gr;
  • rice - 0.5 tbsp.;
  • hard cheese - 150 gr;
  • onion - 1;
  • egg - 2 pcs.;
  • garlic - 2 cloves;
  • sour cream - a glass.;
  • flour - 70 g;
  • salt, spices.

Cooking process:

About 15 minutes before the start of cooking, I boil the rice until half cooked, and leave it to cool. I also cook minced chicken hams. Having freed them from bones and skin, I grind them in a meat grinder together with onions.

In the bowl where the base of the dish will be prepared, I spread the minced meat and drive in the egg. I mix everything well.

Next I add rice, salt and ground pepper. I mix it thoroughly and taste it. I make medium-sized balls and roll them in flour.

I put a frying pan with vegetable oil on the stove, and fry the blanks over high heat until a crust appears. Then I transfer it to a baking sheet. And I turn on the oven so that it heats up to 180C.

To create a delicate sour cream sauce, I peel the garlic and pass a few cloves of it through a special press. I add salt, sour cream and a mixture of peppers to it and mix. It is better to take liquid sour cream, otherwise you will have to pour in water as well.

With the resulting sauce, I pour the blanks on a baking sheet and send them to bake for half an hour. Then I take them out, mash them with cheese and put them in the oven for another 10 minutes.

You can decorate the dish with chopped herbs before serving.

Meatballs with gravy in a frying pan as in kindergarten - remember a tender childhood

I don’t know about the others, but I practically didn’t want to eat anything in the kindergarten. My only favorite food was meatballs and gravy. I still remember their taste.   • round rice - 0.5 tbsp.;
  • sour cream - 2 tbsp. spoons;
  • onions - 120 g;

  • tomato paste - 1 tbsp spoon;
  • flour - 4 tbsp. spoons (1 for gravy);
  • bay leaf - 3 pcs.;
  • water - 2 tbsp.;
  • salt, ground black pepper.

Cooking method:

First of all, I boil rice, in the proportion of 0.5 cups of rice cereal to two cups of water. I put the finished product in a colander so that it gets rid of excess liquid.

Rinse the pork, chop and grind it into a large bowl. I do the same with onions. I add cooled rice, spices and an egg to them. We mix everything very carefully so that all the components are evenly distributed.

I make round balls with wet hands. Then I dip them in wheat flour and fry them in a pan in sunflower oil. They are fried on both sides.

For now, the bottom line is, in a glass of water I dilute tomato paste in a glass of water and fill it with the resulting juice. I cover them with a lid and simmer for 10 minutes.

During this time, mix the flour with sour cream and water (about 0.5 cups). Add the resulting sauce to the meatballs and cook under a lid over moderate heat for another 12 minutes. A couple of minutes before the end, I add laurel leaves.

All our childhood dish is ready!

Tomato sauce "like in a Soviet canteen"

Many people remember this taste from kindergarten and school cafeteria. Despite the minimum of products and the use of tomato paste, meatballs with this tomato sauce are very tender and spicy at the same time. This recipe is for stewing meatballs in sauce, and is not served separately. To prepare tomato sauce "as in the dining room" you need:

  • - 1 glass of broth (or water);
  • - 200 gr sour cream;
  • - 5 tbsp. l tomato paste;
  • - 2 leaves of lavrushka.
  • Combine tomato paste, sour cream and broth. Pound well so that there are no lumps, and pour the meatballs with this sauce. Simmer the meatballs in a saucepan, or in the oven for 30 minutes. The bay leaves are added a minute before being cooked and removed just before serving.

    Italian hot sauce for meatballs

    This sauce is for lovers of spicy Mediterranean cuisine and is best served on its own. All Italian sauces are based on herbs. Mixes of Italian spices are selected based on the main course, in this case meatballs. If meatballs from chicken are some herbs, if from fish others, from beef - still others. Do not be lazy to read on the packaging of spices for which meat this particular mixture is.

    So, for a spicy tomato sauce you need:

    • - 5-6 cloves of garlic;
    • - 1 small chili pepper (no more than 5 cm);
    • - 4 tbsp. l tomato paste;
    • - 0.5 l of meat broth;
    • - 50 ml. vegetable oil (preferably olive oil);
    • - a mixture of Italian herbs.
    • Peel the garlic and cut into large wedges. Put on gloves, peel the pepper and chop it into "wheels". Heat vegetable oil and add garlic and pepper in it. When the delicious smell of spices begins to spread through the kitchen, put the tomato paste in the pan and turn the fire a little quieter.

      Stir the tomato with garlic, pepper, and fry a little. After about 3 minutes, pour the broth into the pan and stir at the same time so that there are no lumps. Adjust the heat until the sauce is barely simmering, cover the skillet with a lid and wait 20 minutes.

      Add spices to the sauce and turn off the heat immediately. Place the lid back on the pan and let the sauce sit for another 5 minutes. The herbs must be steamed and only then will they reveal their aroma. This recipe can be used not only for meatballs and pasta, but also for greasing the pizza base.

      Thick tomato paste and vegetable sauce for meatballs

      In winter, you need to try to cook dishes with vegetables, and sauces may well make up for the lack of vitamins that our body experiences. It's great when you can make delicious and healthy meals at the same time. A thick sauce made from tomato paste and vegetables can not only act as a sauce, but also replace a salad if there is nothing to cook it with.

      For cooking you need:

    • - 1 large carrot;
    • - 1 onion;
    • - 1 parsley root;
    • - 200 ml. meat (chicken) broth;
    • - 5 tbsp. l. tomato paste;
    • - 1 tbsp. l. flour;
    • - Bay leaf;
    • - ground black pepper;

Add a spoonful of flour and mix well, rubbing the lumps. Adjust the heat so that the vegetables do not roast, but languish. Add tomato paste, stir, and dilute with broth. Season the sauce and add a pinch of sugar. Taste the sauce and add salt if necessary.

      Cover the skillet with a lid and simmer the sauce over very low heat for 15-20 minutes. Season the sauce with bay leaf, pepper, and you can serve hot tomato sauce with the meatballs.

      Spicy tomato sauce of Georgian cuisine

      Georgian cuisine, like Italian, has its own history and traditions. Each dish of Georgian cuisine is unique and Georgian chefs are especially sensitive to sauces. Sauce is the heart of any dish. He can destroy a masterpiece and fix a mediocre dish. For lovers of Georgian cuisine, I present a spicy-spicy tomato sauce, which is ideal for lamb or beef meatballs.

    • - 1 large onion;
    • - 2 tbsp. l. tomato paste;
    • - 1 glass of water (broth);
    • - 2 cloves of garlic;
    • - basil and oregano 0.5 tsp each;
    • - 0.5 tsp hop-suneli seasoning;
    • - salt;
    • - sugar;
    • - 30 gr. butter.
    • The onions should be peeled and cut into half rings. Chop two garlic cloves not too finely. Heat the butter in a saucepan and fry the onion and garlic in it until golden brown. Season with salt and add a pinch of sugar. Continuously stirring, put the tomato and water in the pan. Stir well again and cook the sauce to the desired thickness. Add spices to the sauce a couple of minutes before tenderness and taste. The sauce should be spicy and thick enough.

      Tomato paste sauce with cream

      Very soft and tender sauce, which can be poured over meatballs or spaghetti. Spices can be added separately, focusing on the tastes of your home. If this is a dish for children, then you should not pepper the sauce.

      To make tomato-cream sauce you need:

    • - 100 grams of tomato paste;
    • - 100 ml of cream;
    • - 100 ml of milk;
    • - 1 tbsp. l. flour;
    • - 60 gr. butter;
    • - salt, spices to taste.
    • The pan used to prepare this sauce must be perfectly clean and dry. Heat it and add flour to a dry frying pan. Fry it until golden brown and add butter. Stir very quickly and pour in the milk without stopping stirring. Follow the milk with tomato paste and cream. Simmer the sauce over low heat for another 5 minutes, and you can remove it from heat.

      When preparing sauces from tomato paste, the main difficulty is to prevent the paste from burning. The sauce will acquire a rancid taste, and this is no longer possible to fix. Never turn the heat up to maximum, because the sauces should languish, not fry.

      Do not add fresh herbs to hot tomato sauce, or they will lose both color and flavor. Sprinkle herbs on a plate that has already been served.
      Tomato sauce with flour becomes thicker as it cools, keep this in mind when boiling it. If the tomato sauce seems too sour for you, dilute it with broth, or add a pinch of sugar.

      You should not follow all the recipes to the letter. Trust your own intuition and be guided by your taste. The recipe is just a sample, but to make it a masterpiece, use your chef's flair. And everyone who loves to eat deliciously has it.

    • Minced meat 500 grams (in this case chicken).
    • One large carrot.
    • One onion.
    • Two tablespoons of tomato sauce.

    • 3 - 4 tablespoons of vegetable oil.
    • Salt, pepper, bay leaves to taste.

    Cooking process:

    Step 1. Prepare rice. (In my case, it is already boiled). So, fill the rice with water so that the water is at the level of the rice. We put it on the stove, bring it to a boil and reduce the temperature to a minimum. Cook until all the water has evaporated. Next, you need to rinse the rice, so it will be more crumbly. And cool to room temperature. Step 2. Peel and rub the carrots on a medium grater. We do the same with onions, only finely chop, not three. We send the onions to fry first and after a couple of minutes we add carrots to it. Saute until tender in vegetable oil. Step 3. Now, it's the turn of the minced meat. In a deep bowl, mix the egg, rice, minced chicken. Salt and pepper a little. Knead all this mass well and form small balls. Slightly larger than a quail egg. We put the formed meatballs in a large, deep frying pan. Cover the top with sautéed onions and carrots. Step 4. Prepare the tomato filling. We take a glass of boiled water and add tomato sauce there. You can use a paste. Salt and pepper a little. Step 5. Fill the meatballs with tomato filling and place them on the stove. Cook on medium temperature for about 20 minutes, covered. You can cook without a lid, but it will take a little longer. If the meatballs are made from minced pork, then the cooking time should be increased by 10 minutes. Step 6. The meatballs are ready to eat. Serve with any side dish.

    Meatballs with rice - the taste is familiar from childhood

    Ingredients: To prepare meatballs with rice, I prepare:
    • about 500 grams of minced pork and beef,
    • half a glass of rice
    • medium onion,
    • two small carrots,
    • two tablespoons of wheat flour
    • two tomatoes.
    Method of cooking meatballs with rice:
    1. Let's start with rice. Boil the groats in water for 5 minutes (after boiling) or, which is easier, pour boiling water for 15 minutes, after rinsing the rice several times in cold water.
    2. We proceed to the main ingredient - minced meat. To make the meatballs juicy, I take pork and ground beef in equal proportions.
    3. Pepper the finished minced meat, salt and add the egg, add the half-cooked rice and mix.
    4. Now we form small balls from the obtained meat dough. I got 18 pieces.
    5. To prepare the gravy, finely chop the onion and carrots on a grater.
    6. Saute vegetables in a pan with vegetable oil, and then simmer, occasionally adding a small amount of water.
    7. Cut the tomatoes into small cubes and also send them to stew.
    8. Slowly pour flour into the gravy, stirring constantly (I add it to thicken the sauce). You can add various seasonings and bay leaves as desired.
